Eat at Home 3!

just found this thread! I generally shop for 2 weeks at a time (exception being bread, milk and delicate fruit or veg-neighbors have chickens-ours won't be old enough to lay eggs for couple more months; and a garden in growing season;as far as I understand it this isn't necessarily a budget thread although since I cook from scratch and buy in bulk -beef bought by the 1/2 cow from local farmer with no hormone etc for example-I feed our family of 5 very well for <$600/month:cool1:)
just back from the World so shopped today-menu for next 2 weeks-note there are planned leftover meals:
Artichoke and shrimp pasta (my own recipe-happy to share; good pantry staple meal)
Asian Chicken en Papillote (from Katies's Cucina)
Baked Homemade Mac and cheese(all recipes)
Bistro baked fish-leftovers can be easily expanded into a fish chowder
Continental Chicken (chicken layered with dried beef, wrapped in bacon, covered in a cream soup-i make my own condensed cream soup-and cooked in crockpot)
Grilled Chili rubbed steaks with summer succotash (Curtis stone recipe from HyVee- and a cheat meal as most of the veg come from garden)
Meatloaf with mash potatoes and green beans
Ghoulash
Citrus grilled pork tenderloin with Rosemary potatoes(my recipe), roasted carrot and radish
Ravioli with Spinach and bacon (think this was originally on Real Simple)
Slow cooker creamy Beef Stroganoff (all recipes with modifications)
Super Nachos (from Rachael Ray)-kids fave:banana:
And of course BBQ/grill for Fourth!

I use Recipe Box app to plan for the week and quickly pull together shopping lists.
 
My planning has been lacking, but I have been cooking! Yesterday we ate out for our Anniversary, but I still did some cooking! I bought some bone in chicken breasts that were marked way down, about to expire. I seasoned them, stuck them in the oven, and chopped them up! That will probably be chicken salad sandwiches on 4th of July! I also had 2 chuck roasts about to expire. I made Italian Beef, for sandwiches. It's a crock pot recipe, and oh so good! I'm hoping to have it on sandwiches tonight, and on top of baked potatoes in a few days!

DS19 is working at a produce stand this summer. Veggies have been the stars in many meals!

So fishing was sort of a bust! Very bad current changes caused us to only catch one wahoo. So menu for this week..

Friday- wahoo
Saturday- chicken breast

I've been away for training for my new job for the last 2 weeks so it's been a whole lot of eating out all the way around! Hopefully I'm done being out of town for training. I'm for sure home until Tuesday so I'm planning this week like I will be home to cook and planning easier meals DH can take on later in the week just in case. This week we will be using up what we have in the freezer!

Sat: Pulled pork sandwiches (leftover pork from DSSs grad party), fried potatoes (using up the potatoes), corn on the cob

Sun: Dinner at my uncles to celebrate my cousins 21st birthday

Mon: Spaghetti, salad

Tues: Baked chicken legs, broccoli/rice & cheese, fruit

Wed: Tacos, refried beans, nachos

Thurs: Marinated chicken breasts, rice, fruit & veggies

Fri: Ordering pizza
 
Eating at home has been much better lately. Last night we went to the Cleveland Indians game so we ate there. Tonight we are having London broil, baked potatoes, zucchini,and corn.

I made the Pioneer Woman's Salisbury Steak Meatballs over buttered noodles with salad, yum. That recipe is a keeper.
 
I'm having the roughest time menu planning these days:confused3.
Dh is home on weekends and rents a place in the city he works on weeknights (hopefully ending very soon:goodvibes). We still plan for his dinners and work lunches in the family grocery shop though.
DD17 is out with friends or activities all the time so she eats on her own schedule most of the time. I do tend to cook for her and she can reheat.
DS10 is here usually but is away at camp all this week.
And I am doing summer daycare (during the year it's just before and after school). I don't always know who is here for the week until the last minute.

Anyway.. it's a chore and I am buying too much of some things and too little of others. I bought a ton of fresh produce this week and realized that most nights it will only be two of us.:rolleyes1

Anyway.. the plan for dinners so far..

Made tofu parm and chicken fried rice for dh to take for work lunches. Ate tofu parm for dinner.

Monday.. making a tuna pasta casserole with broccoli. Dd and I will end up having to finish it.

Tuesday/Wednesday/Thursday- DD and I will just wing it with leftovers, soups, salads and sandwiches. There's no point planning, she might not be here.

Friday.. Slow cooked roast beef and gravy, oven fried sweet potatoes, salad and peas.

Saturday.. BBQ sausages, broccoli and carrots and baked potatoes.

Sunday.. Probably dinner at my parents. If not.. TBD

Love Pioneer Woman recipes! In fact that reminded me I have to go soak the beans for the refried beans for Nacho (vs fajita night-have bell peppers coming out of garden now) Will never buy canned refried beans again.

DH just said he wanted to take us to lunch-until I pointed out fridge full of leftovers and said he could just give me the $50 and I would put it towards our vacation fund for next year (want to see HP stuff at Universal!)
 
Hey all! Sorry I have been gone so long. Moving and starting a new job have kept me very busy. It has also really made it much harder to cook at home. Especially since I am also working on a novel on top of everything else! But I did just finish my meal plan for the rest of the month and wanted to post it. Hopefully, that will make me more likely to stick to it because my waistband and my wallet are feeling all the eating out of late.

Tonight: Leftover swedish meatballs on egg noodles
Tomorrow: Pizza (homemade with mushrooms, sauteed onion, roasted garlic, red bell pepper, mozzarella cheese, and feta on an olive oil base)

The rest of the month:
Chicken and pea alfredo over rice
Pan fried tilapia, roasted squash, and couscous
Chicken sausage, chips, and watermelon
Shredded beef in the slow cooker for sandwiches with chips and watermelon

Land, sauteed spinach and garlic, and rice

Just planning tomorrow's dinner, since I'm having two of my kids and their children over:

raw veggies and hummus
broccoli soup
vegan pizza (I'll make the pizza dough tonight)
chili-mac in the slow cooker
cornbread (I use a veganized version of the Trail's End recipe)
chocolate chip/peanut butter cookies (which I will make tonight)


Monday night I'm planning black bean burgers with steamed corn and cauliflower.
Tuesday night probably leftover chili-mac.
Wednesday night I have some out -of -town friends with kids coming for dinner. They are not vegan, so I am planning something not too exotic - probably (vegan) meatball subs and pizza plus a big salad.

That's as far as I have planned!

Just a normal week here. Got a full freezer and need to eat it!

DH is working all week because my dad if flying out next week to visit us in California! So short menu next week

Wednesday: cilantro lime shrimp with rice
Thursday: yum yum chicken casserole and green beans

Last Friday I made a bacon wrapped pork tenderloin with potatoes and green beans from the garden. It was fun to look at the plate realizing the veggies came from our backyard :).
 
Usually I break up meals by the day, but I had fun at my farmer's market and grocery store sales, and just have ideas that will blend together into meals...

So, for sides, we'll be having Caprese Salad (with green and purple basil from my garden), Yukon Gold Bacon Potato Salad with Purple Peppers and Sweet Onions, Pepperoni and Veggie Pasta Salad, Raw Coconut Vanilla Smoothies (Never tried to crack and use a real coconut in its husk, but for a buck, there's a 1st time for everything), Sauteed Thai Eggplant and Mexican Eggplant, Sauteed Cabbage and Onions, Dill Cucumber Salad (dill from my garden), Mango Peach Salad, Blueberry Muffins, and Homemade Applesauce with Lodi Apples and Homemade Guacamole and Chips.

I got pork chops very cheap today (2 meals worth), I have turkey burgers in the freezer, and I have chicken and tortillas for fajitas, and maybe another chicken for a stuffed prep (with leftover pepperoni, veggies, and cheese when I have a pretty open day to allow cooking)...Between all the sides and these 5 main courses, I figure I'll have the week covered (since we'll have a day or two for uber leftovers)...heck, I'll probably have half of my lunches covered, too, since it's nice putting 2 salads together and calling it lunch - zero extra prep or time:)...

I love summer and all the variety you can get cheap! I wish it was summer year round!
 
Love summer veggies-changed our nacho night to fajitas to use up the peppers and cilantro from the garden!

Am now having to compete with the chickens for the blueberries and tomatoes. Kids are supposed to be watching them when chicks out of the coop-but the little things love fresh food too :)

How difficult is it to grow cilantro? I haven't tried yet but I want to next year. I normally plant red potatoes, cucumbers, carrots, green beans and zucchini. Sometimes squash and onions too.
