Super-Delicious Zuppa Toscana - Copied from All Recipes.

"This is an oh-so-good recipe. Just the right amount of spice to make you take a cold drink but definitely keep coming back for more! This soup is irresistible!"

1 pound bulk mild Italian sausage

1 1/4 teaspoons crushed red pepper flakes

4 slices bacon, cut into 1/2 inch pieces

1 large onion, diced

1 tablespoon minced garlic

5 (13.75 ounce) cans chicken broth

6 potato, thinly sliced

1 cup heavy cream

1/4 bunch fresh spinach, tough stems removed

Directions :

1.Cook the Italian sausage and red pepper flakes in a Dutch oven over medium-high heat until crumbly, browned, and no longer pink, 10 to 15 minutes. Drain and set aside.
2.Cook the bacon in the same Dutch oven over medium heat until crisp, about 10 minutes. Drain, leaving a few tablespoons of drippings with the bacon in the bottom of the Dutch oven. Stir in the onions and garlic; cook until onions are soft and translucent, about 5 minutes.
3.Pour the chicken broth into the Dutch oven with the bacon and onion mixture; bring to a boil over high heat. Add the potatoes, and boil until fork tender, about 20 minutes. Reduce the heat to medium and stir in the heavy cream and the cooked sausage; heat through. Mix the spinach into the soup just before serving.

THIS IS MY NEW FAVORITE SOUP! I made a few tweaks like just shaking in a few shake of red pepper flakes, using pre cooked bacon, using chunked potato and extra spinach..
I just made it last night with Macaroni vs. potatoes and LOVED it!

Made up some freezer friendly bean and rice burritos today and had some of the filling left once my large tortillas had all been used.

I decided to fill 5 small tortillas, place them in a corningware dish and cover them with salsa and cheese and bake them in the oven.

DH and I are having them for lunch and he's delighted he didn't have to make anything for himself when he got home from work (DH is an instructor at the university here and administered an exam this morning so came home to mark them).
 
We had a good week of no eating out. Last night I made a roasted turkey breast with stuffing, gravy, and carrots.
 

I had some asparagus in my fridge that needed to be used up, so I made this wonderful soup on Saturday.

I also had some leftover cooked chicken, so I made white chili on Sunday. I sub rotel tomatoes for the green chilies and it turns out great!

I found a recipe on the Qdoba Facebook page for their Tortilla Soup, so I had to try it. Turned out GREAT! Ended up making cilantro lime rice, too and created a gumbo with some leftover pulled pork.

Put fajitas together to marinate for tonight. Will serve with some Spanish rice, refried beans and corn.

I've got a couple of heads of cauliflower to use up, so I'm going to try this cauliflower pizza crust tomorrow night. Will top with turkey pepperoni.

I've also got some poblano peppers that I want to try stuffing. Will try something like this recipe with leftover pulled pork and rice.

My son has been asking for jambalaya, so that will be on the menu one night this week.

And I have a bunch of lettuce that needs to be used, so I'll do entrée salads one night... probably with chicken... maybe some pasta, too.

Tomorrow we are having a potluck at work... any suggestions?
 
Forgot to take the stew meat out last night so no beef stew tonight. :(

So, it is now in the fridge thawing for tomorrow and I am going to have roasted salmon, sugar snap peas, and either orzo or bread. Depends how much I feel like doing. Sad about the stew though.
 
Tonight my son has basketball practice so we are eating light. Veggie burgers and baked smiley face fries. Broccoli too.

Yesterday we went to a birthday party and had Brazillian food.

Rest of this week:
Tuesday- BBQ chicken, mashed potatoes and cauliflower
Wednesday- spaghetti with vegetables
Thursday- Chili
Friday- lentil soup with loaf of Italian bread
 
Not positive on every night but here's a general plan:

Monday--Meatball subs
Tuesday--ravioli
Wednesday--pork chops
Thursday--probably a couple of pizzas (5.99 for medium at Pizza Hut), its dd's Christmas concert
Friday--no clue, will probably be Christmas shopping

Saturday--Christmas with oldest son and his family. So, fried turkey, sweet potatoes, dressing and gravy. . .

not sure what else, I will have to be looking up some recipes this week. I do know the sweets though!

a few nights ago I made Panera broccoli cheese soup, a LOT of it.... after dribbling through as leftovers, tonight I layered thin sliced potatoes, shredded sharp cheddar, shredded chicken,peas and corn,and layers of the (thick) soup...ended with the potatoes on top with a layer of cheese,bake till bubbly.....
Last night was leftover crockpot sweet pineapple chicken, reheated,and served with sliced roasted sweet potatoes (like a chip)
then we'll have spaghetti and sauce with spicy sausage....(GF pasta)

Chicken/green beans stirfry with other veggies (lots of garlic and ginger)
and of course, the GF chocolate chip cookies on the counter made with coconut and almond flour (mmm)
Fruit in a bowl on the counter...homemade crockpot granola all set for breakfast (DH and DS eat 2-3 dozen eggs a week for breakfast)

Tried to go grocery shopping today but it's. Snowing! So I just ran to the store close to me to just get what we needed for today

It's a busy week here with finals for me at college, my oldest DD has her mid-terms in high school, and the school play is tonight for my youngest DD. I work until 5:30 and we have to be back for the play at 6:00PM.
Yesterday I had class at night. My hubby came home from third shift with two huge trays of pasta that they had for dinner last night. I was thinking of Subway $2.00 subs tonight. I won't have time to cook. I still have to come home and make my holiday candy because our school goes on Xmas break Friday and I have my Final on Thursday night.
Calgon take me away!

well I just start with today since I am getting here a little late this week..

Today - Pancakes with chocolate chips, bacon and fruit
Friday - Cheeseburger Mac HBH, CHicken pot pie with bread
Sat - Frozen pizza or subway
Sun - Spiral Ham, Homemade Mac & Cheese, fresh green beans

I am on vacation from work 12/23 - 1/1 so we'll just be winging it but this is what I think we'll do..
23rd - Local chinese carry out !
24th - dinner party with family
25th - assorted Barber Foods Chicken, mashed potatoes with skins, garlic shells, fresh green beans
26th - French Onion soup in bread bowls
27th - BBQ Chicken Nachos/Wontons
28th - out
29th - In Laws family Xmas
30th - Shepards Pie, salad and bread
31st - NYE appitizer night
1/1 - Chicken Taco's
2nd - BACK TO WORK - BLEH - meatball subs, pasta, sauce, salad and bread

Went grocery shopping yesterday and here is what we are having
Last night was homemade pizza with fresh mozzarella cheese and basil yum!
Tonight is BBQ meatloaf with egg noodles and veggies
Friday will be hot dog casserole
Saturday will be chicken with rice and veggies
Sunday will be american chop souy
Monday will be waffles and fruits
Tuesday big Christmas Eve spread still need to figure out when I have to make what very excited!
 
This week has been officially dubbed "Christmas Craziness Week" as we have had something EVERY NIGHT! We have successfully "Eaten at Home" every night, but meals have been sketchy at best. I did get takeout last night, but it was a BBQ family pack from the local joint for just $12, so that was cheaper than home cooked.
