I have been MIA for some time now, but we HAVE been eating at home...other than last week while we were on vacation. Even then, we had a full kitchen in the villa, so some of the meals were prepared and eaten there as well. :thumbsup2 Next week's menu:

Here's what I've been doing this week:
Chicken with Olives -
this recipe was super GREASY... I'd cut way back on the butter & Olive oil if I did it again and would make sure to dry my chicken with paper towels because it spittered and sputtered and splattered like crazy. But, other than the copious amounts of grease, this was delicious served with pasta. LOVED the addition of the olives!
Beef Stew with Mushrooms -
This is my go-to recipe whenever bottom round is on sale. Served it with mashed potatoes instead of pasta for a change. Always skip the wine and consommé and just use two cans of beef broth instead.
Beef Fajitas -
Have this marinating for dinner tonight - another go-to when I've got a bunch of steak to use. But, also a good recipe with chicken breasts.
Apple Pork Roast -
Can you tell I'm a Pioneer Woman fan? I did this one in the crock pot with a frozen pork loin. Skipped the apple juice and just used a 1/2 cup of brown sugar to get the sweetness. Served with wild rice... yummy!!!
Spaghetti & Meatballs -
I make a huge batch of these meatballs and then freeze them. Once they are frozen, I put them in a freezer bag and grab a few whenever I need a quick meal. Serve them with canned marinara... quick, easy meal and one of my kid's favorites. I also use this same recipe to make meatloaf.
 
Oh, and tried this last week... One Pot Wonder... wasn't expecting much, so I was pleasantly surprised. I didn't have fresh basil, so used dried... should have used fresh. Added spinach and it was great. Will add chicken or spicy sausage next time.
 
They are discharging my mom tomorrow and then she goes back on tuesday to have her gallbladder removed.

Tonight I am going to eat at home and have either a chicken sandwhich with fruit or patty melt with fruit.

Sunday - Chili over rice with cornbread muffins
Monday - Roast beef, mashed potatoes, green beens
Tuesday - Leftovers
Wednesday - Chicken pot pie
Thursday - Pork chops, stuffing, corn, okra/tomatoes
Friday - Beef Stroganoff over egg noodles, mixed veggies, and rolls
 
Thanks for all of the prayers! As the days get closer to the surgery, the more she is talking about it. The big day is Wednesday!

Today is my baby Claire's 8th birthday! Two years ago we were celebrating her Birthday on the Dream! Now we are on our way to a place called "Jump Zone" that has all bouncy houses:) I made a cake and will be making cupcakes with Jack Skellington faces for her B day at school. I will be making some pickles and possibly some fried chicken tomorrow. Otherwise, no other big plans.
 
Hoping to start getting back into planning. Still getting used to this very restrictive diet. I had a CT yesterday and another diagnostic procedure on the 28th. I have good days and I have bad days. However, I know I still need to eat... and I need more then frozen pot pies!

Already making changes LMAO... only took me 4 hours!

Saturday: Chicken Tenders and Roasted Sweet Potatoes (making a large batch of tenders so I have leftovers to freeze for fast lunches)
Having fried chicken from the grocery with roasted sweet potatoes and creamed corn. I realized that I had not had a bite to eat yet today.
Sunday: Roasted Vegetable Sandwich and Soup

Monday: Hamburgers, Corn on the Cob, and Fried Potato and Onions

Tuesday: Roasted Salmon and Roasted Garlic and Olive Oil Couscous with Asparagus, Red Bell Pepper, and Mushrooms

Wednesday: Omelet and Biscuits

Thursday: Leftovers

Friday: Chicken a la King, Rice, Roasted Brussels Sprouts

Saturday: Leftovers

Sunday: Steak and Eggs, Hash browns, Biscuits

I am also making Blueberry Muffins and a Vanilla Sheet Cake with Buttercream Frosting this week.
 
We haven't done great lately either!
Ate dinner out the last three nights:-(

Here is our plan for the week.
Tonight: stuffed pork roast and sausage on the grill and baked potatoes
Monday: grilled chicken salads
Tuesday: chicken stew with potatoes and carrots
Wednesday: homemade chili over Fritos with cheese.
Thursday: gymnastics night, we always eat out

I'm looking for new ideas, getting bored with the same old stuff.
 
Sun - chicken parmesan + salad
Mon- blackened fish + grilled potatoes
Tue - ??? Band activity...fast food
Wed - pork steak + veggies
 
I am so uninspired lately....hard to get motivated to make a list, never know what to make.

But here is this week anyway,

Hamburgers, Orange Julius shakes
Rigatoni and Garlic Bread
Minestrone Soup with Crostini Dippers
Homemade Deep Dish Pizza
Turkey and Mashed Sweet Potatoes
Breakfast casserole and coffee cake

Hi everyone! I am trying to get back into the swing of things.

Monday: Red bean chili with cornbread
Tuesday: Pesto Pasta Chicken with zucchini
Wednesday: Chicken tacos with Spanish rice and Refried beans
Thursday: Chicken and Sausage Jambalaya and corn
Friday: Stuffed bell peppers with mac and cheese
Saturday: Hamburger Steak, mashed potatoes, green beans and biscuits

I will also be making a pumpkin spice cake.

I use a can of concentrated orange juice, splash of vanilla extract, ice cubes, and about a 1/2 cup milk. Then I blend it all up in the blender. Sometimes I'll add a little more milk or even a pinch of sugar, depending on the brand of oj concentrate. It's pretty simple and my family loves them!

Well this week isn't going to be the greatest on my "eat at home" scale, I can see that already!

Best thing--new baby granddaughter will be here any day now!

Everything else--dd has practice tonight 6-8. Her high school is about 30 minutes away so 5:30-8:30 or 9 for us (it always takes longer to wrap it up), tomorrow night Powder Puff football game--big fund raiser but will go till around 10 and then Wednesday is church until 8:30 or so.

But, I bought a turkey breast, its cooked and in the fridge. And I bought some shrimp.

So here is what will be planned (even if it doesn't get executed very well! :rotfl:)

Monday--Turkey and gravy, steamed veggies and a salad
Tuesday--Baked shrimp (which is really more steamed), roasted brussel sprouts, salad
Wednesday--sandwich night (turkey)
Thursday--Chicken tacos
Friday--BBQ Shrimp, rice, salad
Saturday--Fair night--going to a county fair so eating all that good fair food!
 
Let's see this week we're having:

Brown sugar glazed pork tenderloin with collard greens and sweet potatoes.
Penne pasta with eggplant, sausage and feta.
Black bean burritos with chips
Baked Potato soup.

I need to come up with a Friday night meal. Maybe chicken sausages with onions and pepper and fries.

The Blueberry Muffins came out AMAZING!

Saturday: Having fried chicken from the grocery with roasted sweet potatoes and creamed corn.

Sunday: Chicken Sandwich with provolone, spinach, and avacado

Monday: Hamburgers, Corn on the Cob, and Fried Potato and Onions

Tuesday: Roasted Salmon and Coconut Shimp and Roasted Garlic and Olive Oil Couscous with Asparagus, Red Bell Pepper, and Mushrooms

Wednesday: Omelet and Biscuits

Thursday: Leftovers

Friday: Chicken a la King, Rice, Roasted Brussels Sprouts

Saturday: Leftovers

Sunday: Steak and Eggs, Hash browns, Biscuits

I am also making a Vanilla Sheet Cake with Buttercream Frosting this week.
