Well, my first attempt at posting a menu was an epic failure. :blush: I've already change my mind twice. Here's the newest version. Changes are in red. Things that were replaced are in black.

I'm happy to have an abbreviated meal plan to share, since I'll actually be cooking a few days in a row for the long weekend. Most days I have cereal for breakfast & lots of veggies & fruit the rest of the day. Hummus is my go to for dipping veggies in. Okay, here goes my menus:

Sunday - Thurs: Quinoa w/black beans, brown rice w/shrimp, eggs, & tomatoes, quinoa w/steamed vegetables (My guys feed themselves most days)

All breakfasts Friday thru Monday will be breakfast casserole or make ahead bacon, egg, & cheese biscuits. Bread for dinners will be from a local bakery.

Fri: (Baked Brie w/ crackers or French bread), Burgers (BBQ Chicken), (grilled corn on the cobb) Potato Salad, LTT's Ooey Gooey Toffee Cake w/Vanilla Ice Cream

Sat: Homemade Cheese Puffs (take-out Caprese salad) , take-out pizza, Lemon Chess Bars

Sun: White Cheddar & Apple appetizer w/Crackers (Mussels), Grilled BBQ Chicken (Grilled Salmon), Crock Pot Mashed Potatoes (Crock Pot Polenta), Grilled Corn (Steamed Mixed Veggies), Dessert Of Choice. Basically, everything about this day changed.

Mon: Mussels appetizer(Sautéed Scallops), Grilled Rack of Lamb, Crock Pot Polenta (Crock Pot Mashed Potatoes), Sautéed Spinach, Dessert of Choice

I'm pretty sure this will be my final version. Now I just need to come up with a grab & go option for when we get back from the beach & want to go to the movies, Jai Alai, etc. I don't want to have to pay their prices for snacks.
 
Monday- shrimp and pasta (pioneerwoman "penne a la betsy")
Tuesday- crockpot tacos!
Wednesday-family in town so having a family dinner out with them
Thursday-Crockpot chicken cacciatore (my version)
friday-pizza?
Saturday-pioneer woman cajun chicken with pasta
 
Sunday we had Chicken in the style of Chipotle with rice, beans, etc.
Monday we had meatloaf, potatoes and corn on the cob.
Tuesday we had chicken tenders frozen (Tyson)
Tomorrow will be cheese coneys
Friday and Saturday we will be at parties.
 
Well, thanks to you guys, I have not posted lately but I have been staying on track with cooking at home, just not as cheap as I would like. Groceries are so expensive!! Sunday we had chicken fajitas with all the fixings; Monday we had salmon (they keep telling you to each fish, but wow, the price!) and yesterday we had Peppercorn Steak in the crockpot. I wasn't too sure of the Steak at first, but both of my guys had seconds so I guess it wasn't too bad. I was trying to cut costs and being it was going into the crockpot I bought a cheaper cut. It was still pretty tough!

Tonight - Tacos, since I have all the sides from the Sunday dinner
Thurs - White Wine chicken in the crockpot
Fri - First high school football game of the season! DS will eat with the marching band, DH and I will find something easy and quick
Saturday and Sunday - I will need to go back to the store this weekend and put my thinking cap on

Count me in!! The DH has went down to 40 hour weeks, so we lost 20 hours over overtime per paycheck, plus he has been gone ALOT with the miltiary (DH is in the National Guard) and even though he gets paid at the end of the two weeks, it still makes the regular checks pretty small!!!

BONUS though is that we did a MAJOR stockup at the Commissary the other day and repackaged all the meat, and we organized our pantries (we have 5 small ones) and so I think we will do just fine!!

Little change for tonight: I'll be the only one eating the dreamfields pasta with sauce, meatball subs for the boys and my DD is working so she'll eat there..
 
I just want to say to everyone here... you are all amazing people. You have helped me through so much and been here to listen to my rants and tears. I want you all to know how much that has meant to me! Thank you thank you THANK YOU!!!!

Things here have been a bit crazy again. I have finally found a doctor that is taking my medical issues seriously and not just throwing more medications at me. She is setting me up with an allergist and a specialist for my other issues (possible interstitial cystitis). I have meds that are helping the pain enough that I can live my life for the most part (aka, not curled up on the couch in pain) though I do still have some discomfort. Some days are better then others.

However, this also means that food has become an issue. For now I am having to restrict specific foods and drinks to try and help with the flares. No tomatoes, citrus, caffeine, carbonated drinks, alcohol, anything acidic, anything spicy, chocolate, and the like. There is also a chance that I have IBS so I am having to also look into the diet for that (the two issues are often found together).

So meals have been really up in the air. This week has been more about what I have energy to make then anything else. Been eating way too much junk out which has not helped in MANY ways. Going to work on my meals for next week and try to start eating better again.

Tuesday I worked later than originally planned so we had soup and sandwiches.

Last night we had Chinese takeout, I had a coupon.

Tonight is still up in the air. I need to grocery shop.
 
LilyWDW - glad to hear you found a Dr who seems to know how to help you! good luck with the meal planning - maybe just keeping it simple like grilled chicken and veggies for the week might help you feel better and keep the junk at bay.. Take care!
 
Going to our camper for the weekend. Here is what is planned in no particular order.

BBQ Ribs,
Campero Beans
Turkey Burgers
Bratwurst
Cereal and Coffee Cake for Breakfast
BLT's for lunches
Grilled Veggies.

tonight we have soccer practice and are eating meatball subs

tomorrow we have a birthday party and chicken for dinner

sunday is leftover spaghetti sauce and a cook out for lunch

Thursday night we ended up having leftovers.

Friday night we had balsamic beef french dips with chips and fruit.
 
Here is a easy veggie beef (or just veggie) soup for the crockpot.

I came up with this when I was subbing full time at the school for 5 months straight (this started as a 2 week job; yeah; the para's surgery DIDN"T go well) and by the time both the DH and I got home, we DIDN"T want to cook, and it was the middle of winter

1 lb ground beef, browned and drained (season however you like; i just did S&P)
cans of your fav. veggies for veggie beef soup

cook on low in the crockpot all day; your house smells yummy

The GREAT thing about this, is that, if you put your crock pot on the 'keep warm' setting, each day, you can just add another couple cans of veggies. We did this for about a week straight, lunches and dinners. (the dh would replace a can when he came home and had his lunch)

it will turn into a veggie soup unless you put more ground beef in it a couple days later.
 
So today was my first trip to the Farmer's Market and meal planning with my new diet restrictions. The hardest parts are no tomatoes or acids (soy sauce, vinegar, Worcestershire, etc) and staying away from processed foods. Caffeine, alcohol, chocolate, and the rest are pretty easy to keep away from. Right now I am trying to find salad dressing recipes that have no avoid ingredients since most use some sort of acid.

I mean I know I will eat well. It's just hard to adjust because I will miss my curry and soy sauce! Hope I can get this flare under control and maybe be able to add some stuff back in.

My meals this week will be:

Tonight: Gnocchi with Garlic, Oil, and Romano Cheese, Salad
Sunday: Rib Eye, Baked Potato, Roasted Squash
Monday: Chicken Gyros, Roasted Potatoes
Tuesday: Steak Hash and Eggs
Wednesday: Twice Baked Potatoes, Broccoli
Thursday: Creamy Chicken and Pasta Bake
Friday: Pancakes (blueberry?) and Bacon
Saturday: Roasted Chicken Thighs and Root Vegetables
Sunday: Salmon, Couscous, Asparagus
 
Today's Menu

Breakfast - Trail Mix (while doing laundry)
Lunch - A Take and Bake Papa Murphy's Pizza (my mom bought it as a fundraiser about 2 months ago, and its been in the freezer and we were told to bake and eat it!)
Dinner - Have no clue; might just snack

Snacks - farm fresh seeded watermellon!
