Made Butter Chicken and Jasmine rice for lunch today...will be leftovers for lunch for DH tomorrow.

Made a GIANT batch of potato salad to go with tonight's carne asada steak, so we'll be eating that up over the course of the weekend.

My mom brought us a dozen corn on the cob on Sunday night and we will polish the rest of those off tonight with the carne asada, potato salad and garden salad.

Tomorrow night is pasta with garlic toast and garden salad.

We leave Sunday morning to move my younger D to college in Ohio. We have only one meal planned for the weekend. Tonight we went out for her last in town meal until December. She picked our local BBQ restaurant that has been in business since 1926.

We had one of our traditional weekend dishes arroz con pollo yesterday. We were having a rummage sale this weekend and it feels good to be rid of all this kids stuff I had in my basement! Today my hubby requested sweet and sour chicken. I spent under $30 at the grocery store today and we got a lot of produce from our neighbors which I have been putting to great use too:)

Ahhh... another week and another set of meals. I seem to be getting over my illness. Each day I feel a little bit better. Just hope it keeps going!

This week I am making Kale Chips and an Apple Pie. As for my meals:

Monday: Buttermilk Pancakes, Sausage
Tuesday: Green Potato, Pea, and Vegetable Curry, Rice
Wednesday: Out of town so going to eat lunch at Chop House. Dinner will be leftovers.
Thursday: Gnocchi with Olive Oil, Garlic, and Shallots, Salad

This is my first time posting on this thread. I subbed to get meal ideas, but then thought maybe my meal ideas might help someone else. Here's our menu for the week:

tonight -- potatoes & smoked sausage
Monday -- beef pie with puff pastry crust with salad
Tuesday -- crockpot roast chicken with corn on the cob
Wednesday -- wrapped chicken with steamed broccoli
Thursday -- Fresh Takes pork chops with mashed potatoes

Here's what is on tap for us this week--

Tomato and fresh mozzarella tart (made on puff pastry)
Spaghetti with homemade tomato sauce
Korean beef tacos, rice, vinegar cukes
Balsamic and onion pot roast, roasted potatoes
Homemade sauerkraut pierogies with sour cream and applesauce

FRIED OKRA!!! YUM!!!! Only thing better is fried green tomatoes.

Well, I didn't post last week, but still managed to pull off cooking every night; I just wasn't in the mood to be creative and plan ahead; last nights Jambalaya was pretty good, and while I was chopping away I went ahead and chopped up my veggies for a potato salad; so here's a start:

Monday - Beef short ribs in the crock pot, and I already have the potato salad made and in the frig; with grilled asparagus (from Trader Joe's)
Tuesday - My usual turkey loaf, but this time with fresh spinach (made the mistake earlier with frozen, YUK); and mashed potatoes
Wednesday - Probably leftover jambalaya
Thursday - White wine chicken, wild rice, broccoli
Friday - More than likely I will give a choice of tacos or quesadillas

I will have to head back to Trader Joe's this Friday; its a far drive from our house but closer to my work; and when my DS and I went a couple of weeks ago our basket was overflowing with stuff for him to take back to college; now its my turn!

Good luck with the week everyone!

I saw a poster was making homemade pierogies - I am impressed! They are so difficult to make, they were a staple with I was growing up and went to my grandmother's house who was from the Ukraine. Thanks for bringing back the memories:)

I love seeing what everyone makes. I just wish I could cook. :thumbsup2

This week is not very exciting but we have a busy week as kids start school on Wed.

Sunday - Steak Fajitas
Monday - Hot Dogs, mac and cheese, fruit
Tuesday - beef stroganoff, veggie, bread
Wednesday - Chicken, veggie, potatoes
Thursday - dinner out
Friday - Grilled cheese, chili or chicken noodle soup
Saturday - dinner at my in-laws

Ok, decided to try this. Maybe it will help dd and I stick to our guns about no fast food!

Monday--Spaghetti, salad (got the homemade sauce in the crock pot right now)

Tuesday--beef roast with carrots (crock pot again, its the 3 envelope recipe from FB; we love it), rice, salad----choir practice night, won't pick dd up until 6 or 6:30, this is a hard night not to eat out but hoping to get a chance to cook the rice either tonight or in the a.m and the salad is in the fridge already for the week.

Wednesday--smothered fries (using the left over roast and gravy and cheese sauce over fries)-the hardest night not to grab ff. DD has youth group at church. The only possible way for her to eat at home, is after church. Having one of her favorites to encourage that! And she can grab some fruit and nutella before church to tide her over.

Thursday--meatloaf, baked potatoes, lima beans and salad

Friday--roasted, garlic and Parmesan chicken breasts, roasted potatoes, salad and green peas

I will be reading the whole thread now looking for new ideas.

Welcome!! We are always glad to have more people. If you see something you like just ask for the recipe.

BTW, can you point me in the directions to the crockpot beef roast?

And tonight I am having Hamburger Helper. I have not had it in a year or so. I am not feeling well either so wanted something easy and "comforting".

Oh the roast is a cinch. Just put a roast in the crock pot, add 1 envelope of brown gravy mix, 1 envelope of Italian dressing and 1 envelope of Ranch dressing; and a 3/4 cup of water. Then let it cook (I do mind on low for 10 hours) Its really good and the gravy is soooo good. Works with pork roast too,

Didn't realize this thread existed! We have recently started tracking our spending on Mint. Last month we spent $1500 on groceries and eating out! I was floored by that number!! Yikes!

Because of that, we have decided to eat at home and watch our spending. This week:

Sunday-scallops with pasta
Monday-salmon, potatoes, roasted snap peas
Tuesday-homemade Alfredo sauce, pasta, grilled chicken
Wednesday-crockpot chicken and dumplings
Thursday-chicken fried rice
Friday-leftovers or eggs
Saturday-spicy pulled pork in the crockpot

Hoping we can stick to our new goal!!

I'm loving this thread too.:cool1: I wish I could share more. Unfortunately, I eat very low calorie 6 days a week. Saturday is my splurge day, so my menu for that day wouldn't save anybody money. The same is true for vacation. The couple nights we ate in over the weekend wouldn't help anyone save. Eating out at a moderately priced restaurant would have been cheaper. :rolleyes1

S - greek marinated chicken, lemony potato rounds, green beans
M - cheesesteaks, garlic potato wedges
T - creamy shrimp pasta
W - french bread pizzas, salad
T - out
F -out
S - inside out stuffed chicken with mushroom dressing, carrots

Thanks for the recipe links. The shrimp pasta sounds delicious. It's definitely going on my list of soon to make recipes.

Would you mind sharing how you make Kale chips? That may fit into my low calorie weekday diet.

So I ended up not eating anything tonight. About an hour after taking this newest antibiotic (which I HAVE been on before) I started to have a reaction. Ended up in the EQ about 7:45 and just got home now (11:24). I am pumped up with drugs atm and will have to have an epi pen to be on the safe side. It sucks and was terrifying... and it wasn't even a major reaction. Just moderate (nausea, issues breathing, tingling of the lips and tongues, but no swelling of the tongue or throat thankfully).

Think tomorrow will be a slow day (after I pick up some more drugs lol).

Oh no, I hope you feel better soon.

Tonight we had pork tenderloin with leftover smashed potatoes, brussel sprouts, and applesauce.
