DH and I have to go to the viewing/ visitation for a dear friend that died of a sudden heart attack on Monday. He was just 41 years old and left behind a wife and two sons, ages 7 and 12. This will definitely be a tough one. Dinner will be a drive-thru before or after the viewing.

Thank you friends. This was such a tragedy. DH actually works with this friend, and the heart attack happened at work. It was my BFF's brother in law. So many lives affected by the loss. Then after the horrible tragedy that happened in Connecticut Friday, it has been a sad weekend.

I have a ton of shredded chicken and am in need of ideas on what to make with it!

I am making a new recipe later in the week with shredded chicken. Here is the recipe for Chicken Tamale Casserole:

Dinner tonight for Meatless Monday:

Tomato Tortellini Soup (http://www.tasteofhome.com/recipes/Tomato-Tortellini-Soup?keycode=ZFB)

I made cookies (more) this weekend. I will post them on my blog later this week. I have a final today and tomorrow and then Winter Break:cool1:

Yea, I can barely keep my eyes open and had no energy to actually cook.

Tonight is an "easy-peasy-lemon squeezy" meal of:

Turkey and Pepperjack Sandwiches
Chips
Pickle Spears

Corn

Friday:
LEFTOVERS

I tried to make the chicken stock (for last night's lemon chicken soup) in the afternoon yesterday, but the liquid boiled away while I was picking up the kids from school and burned the bottom of the pot (DH was home and pulled it off the burner before it was too bad but after it was too late to save either the pot or the stock) so we ordered Swiss Chalet delivery for some rotisserie chicken. They have a 50 min guarantee but delivered the food 1.25 hours after I called so we got it for free. It wasn't that great...kinda cold and the fries were soggy so I'm glad we didn't have to pay for it.

I took steak out of the freezer last night, so we'll have that and baked potatoes tonight for dinner with either salad or some frozen veggies.

Tomorrow night is something with chicken breasts...another busy day so we'll likely just broil them and make up a lipton sidekicks noodle package to go with them.

Friday night is scheduled to be leftover night. Saturday morning I have to take the turkey out of the freezer so I need to make sure there's room in the fridge but since the soup was a bust, I'm thinking there won't be anything leftover to eat. If that's the case we'll just have grilled cheese sammies.

We're taking the kids on a Spirit of Christmas train ride Saturday afternoon (we help Santa save Christmas!!) :cool1: and it ends at dinner time so I need to find a good crockpot recipe that the kids will eat (which is the tricksy part!!) so I can set it in the morning and then come home to some delicious eats.

I haven't planned any further than that yet...

Saturday - Pork chops, rice and veggies

Tuesday - Christmas Dinner - Ham, turkey, mashed potatoes, mac and cheese, green bean casserole, corn, peas with onion, rolls.

Merry X Mas to all my Diser friends! I had finals all last week and passed the class I was so worried about:cool1: I also have had the flu for the last week! Boo! But, I am feeling better just in time for tomorrow! Last night I kept it simple with rice, boneless skinless chicken breast, and cream of chicken soup all mixed together. I will probably do something fast tonight.
Here's some things I have been making:
