We had meatloaf muffins and mashed potatoes last night.
Today we had a cold tuna salad made with shell noodles, celery, onion, and peas.

Tomorrow we might be going to a dinner for my Spanish class. I get extra credit. There is also my kids' Halloween dance tomorrow night.
 
Kids are with grandparents tonight and hubby is out of town, so I will just warm up a bowl of leftover Veg Soup for dinner. Menu for next week...

I have been home all week sick. So, last night I did the beef stew but NOT in the crockpot. I did it in the oven and it was amazing! Best beef stew I have ever made I think.

And then I totally forgot to take out the ribs to thaw so I had to shuffle.

Tonight will be the spaghetti with chicken sausage and garlic bread.

Tomorrow will be the country style ribs, scalloped potatoes, and corn.

Sunday will be the over fried chicken, mac and cheese, and green beans.

Monday will be the peanut chicken stir fry, rice, and broccoli.
 
I got out of work at 6PM, ran home and made a quick meal of mini pierogies and BBQ mini turkey cocktail weenies. Then my DH and DD went to the Halloween dance.(she's the Geanie) We have trick or treat here tonight. It's going to be in the 40's. I plan on making a huge pot of chicken dumpling soup:thumbsup2

Santa Fe chicken in the slow cooker. Served it with rice tonight (Sunday)
Monday: Rice Porridge with almonds and dried cranberries, and Santa Fe chicken wrapped in corn tortillas (power or no power; it'll taste good hot or cold)
Waiting to see what the storm brings before deciding the rest of the week. Might be raiding the fridge to finish produce, lunchmeats and cheeses before they spoil if the power goes out, and then resorting to peanut butter sandwiches and canned fruit for the duration.

When the weather calms down again, I think I'll make shrimp skewers on the Foreman grill, and serve them with black beans and rice.

Tomorrow: bbq pork fried rice, potstickers, and vegies
Tuesday: lentil soup, bread, and salad
Wednesday: baked halibut, rice, broccoli
Thursday: bratwurst, boiled potatoes, kraut

I got a few bulk cooking projects done or underway this weekend. I made 12 sausage mcmuffin style breakfast sandwiches for the freezer (to curb my a.m. McDonald's habit) and have 4 pounds of Chinese bbq pork marinating. They had ground pork on sale (amazing--last time I wanted this I couldn't even find it!) so I bought 2 pounds. I plan on making mountains of shrimp/pork potstickers tomorrow night to freeze.
 
I am getting back in the swing of things. Two weeks ago we were at Disney. I got sick while we were there so last week I basically lived on chicken soup. Finally feeling better, so I think I am up to doing a little cooking!

Last night hubby grilled salmon and I made couscous to go with it. Tonight I am making spaghetti.

Tuesday: Tacos, Spanish rice
Wednesday: Halloween food! Ghost Chili, Mummy Hot Dogs, Halloween sugar cookies, etc. My mom & sister are coming over and we are just going to snack all night and watch horror movies while we hand out candy to the trick-or-treaters.
Thursday: DS has a football game, so we'll grab something on the way home
Friday: I am volunteering in the concession stand at the varsity football game, so I'll just eat a slice of pizza or something. DS will eat there, too. DH is on his own! lol
Saturday: DH is making his famous "Cow Lickin' Chili" on the grill for us to eat while we watch the Alabama game. I'm really looking forward to it.

I hope everyone in the path of Sandy stays safe! I am saying prayers.
 
My three week menu starting 10/26 and ending 11/16. Here we go!

Friday - BBQ Turkey Kielbasa with homemade oven fries and mixed veggies.
Saturday –Pot Roast with potatoes and carrots and biscuits
Sunday - cookout – homemade burgers with grilled veggies and salad
Monday – Part Deux night – Sheppard’s pie using the left over pot roast
Tuesday –Polynesian Pork Chops, veggie couscous, fruit
Wednesday – Halloween – chili dogs with oven baked garlic “fries”
Thursday – Part Deux night– “pork” fried rice using left over Polynesian pork chop and pot stickers using chicken I cooked in the crock pot for dinner on Saturday
Friday – Crockpot green beans with ham & potatoes– I use a smoked turkey wing to add the smoky ham flavor to the beans and then stir in cubed lean ham before serving with corn bread
Saturday – pulled chicken bbq (cooked chicken in the crock-pot on Thursday) with sweet potato oven fries and Mexi-corn
Sunday – Indulgence night! Pork Chops with “fried” apples, baked mac and cheese
Monday – grilled bacon wrapped filet mignon with stuffed baked potatoes(both from Omaha steaks) with left over green beans
Tuesday – Part Deux night – make a beef noodle bowl using one of the steaks I cooked for the beef
Wednesday – GF Pasta with Chicken and veggies, garlic knots
Thursday – stuffed sole for me and crab cakes(on sale at Kroger for $1 each) for hubby, DS & DD jasmine rice, green beans
Friday – homemade pizza and salad
Saturday – grilled top sirloins with baked sweet potatoes and oven roasted carrots
Sunday – breakfast for dinner. Gluten Free pancakes, bacon, eggs, “fried” potatoes
Monday – Indulgence night! country fried steak with mashed potatoes, cream gravy and peas/carrots, biscuits
Tuesday – maple ginger grilled salmon with couscous and salad
Wednesday - cookout – grilled burgers/dogs with oven roasted potatoes and slaw
Thursday – Get ready for the grocery – left over burgers, salmon, country fried steak – let’s clean out that fridge!
Friday – homemade pizza and salad

Desserts will be – Gluten Free brownies, Gluten Free (crust free) pumpkin pie, regular chocolate chip cookies – I will make 1 item each week and it normally lasts the entire week as we don’t eat it every day (most of the time I end up sending it home with my daughter as she is single and likes taking treats in her lunch). DS doesn’t like Gluten Free cookies so he normally grabs himself some ice cream at the store and eats on that when he wants something sweet.

All of this, not counting a gift card for the Omaha Steaks, cost less than $100 and it is comforting and very healthy. We normally eat more fish but I got too good of deal on the meat to pass it buy.

Omaha is having a HUGE 50% sale off this week and I was able to combine it with a gift card I had so I got $179 (retail) worth of meat for $80 (their sale prices) and had a $75 gift card so less than $10 out of pocket! I still have 2 full packages (4 chicken breasts, 4 sirloin strips) and part of the hot dogs and over half of the stuff baked potatoes in the freezer from Omaha that I will use the following week.
Combined with what I had in the freezer (veggies, meat, flour, rice, couscous) and what I picked up at Kroger ($54) I still have $30+ to use at my local produce market for fresh fruit and salad fixings and milk. Even if I had paid the sale price for the meat I would still be at less than $200 for 3 weeks of meals for 3 adults and 1 part time adult daughter who eats at “home” 3 -4 times per week.
 
I hope everyone is staying safe from Sandy. We are experiencing lots of rain and winds here in North East Ohio.

If you have time, what did you order from Omaha? I've never ordered from them because I thought they seemed high. I looked around their website and was just curious if you got a special for the 50% off for if it was one of their combos or...

Anyway, just curious about what you got. Maybe I can find some deals there too!
 
Hi Friends hope everyone is safe from Sandy - we got wind and rain here in Maine but somehow we managed to keep our power! YAY!! we live in a mobile home park and have a gas stove and would have been able to use our cold water so reallly we'd just have been in the dark so not too much of a hardship this time of year where the weather is warmer.. anyway on to our menu for the week.. it's just the Hubs and I and we are pretty much wiped out of everything so it's a mix match clean up week.. then I'll start fresh next Sunday - Happy planning

Sunday - was leftovers from Sat (Pizza & Olive Garden)
Monday - was BBQ Pork ribs, tater tots and l/o green beans
Tonight - will be Brie and Apple Barber chicken, l/o Mac & Cheese and steamed broccoli and cauliflower with peanut sauce
Wednesday - will be elbow, sauce and garlic bread
Thursday - shake n bake pork nuggets & groton's crispy shrimp , l/o white rice, l/o broc and caul from Tuesday
Friday - will be Ballpark cheeseburgers and tater tots
Saturday - maybe frozen pizza? maybe out to eat (up in air as Hubs is hunting all day and I'll be at an all day scrapbooking event)
Sunday - :) Grocery shopping day so we'll buy something for dinner
 
I am not too crazy about Omaha steaks. I found the portions to be really small and the cuts weren't the best either.

Today I made crock pot porcupine meatballs with mushroom gravy.

tonight...steak and noodles with salad

tomorrow night...trying a new recipe...seafood lasagna. Hope it's tasty!!
 
Last night we went out for dinner before we grocery shopped.

Tonight we had baked ham and cheese sandwiches with tomato soup and orange slices.

Last night we had crock pot country style boneless ribs. We had potato soup in sour dough bread bowls tonight. It was semi-homemade but one hundred percent delicious! My DD is entrance testing for high schools both Friday and Saturday and we might go see the President with Katy Perry on Saturday too.

We are going through a rough time right now both emotionally and financially, but my pantry is fully stocked to help us get through. I've got my favorite cooking holiday to look forward to at least, Thanksgiving is right around the corner:)
