HELP- I have some frozen stew beef in the freezer that I have NO idea what to do with. I want to eat it this week, but it'll need time to thaw in the fridge I suppose before I can do anything with it. Any favorite uses? I think it's just one pound.

Mom picked up a chicken, mashed potatoes, slaw, and corn bread from Fresh Market on her way home. My allergies are kicking my butt today. The weather is making my sinuses horrible. Headaches and ear popping, sore throat... the works. So, I took tonight off.

I throw mine in the crockpot with beef broth, mushrooms and onion soup mix. Cook on low until nice and tender and then combine with egg noodles for beef and noodles. Serve with a nice salad for an easy dinner.

Tuesday.. Pierogies, Carrots, Green Beans

Wednesday.. Breakfast for dinner (pancakes, sausage, smoothies)

Thursday.. Shepards Pie (meatless "chicken" fingers for dd)

Friday.. Hamburgers, Corn, Fries, Smoothies

Saturday.. Tofu Parmesean

Sunday.. small grocery shop. We're leaving for vacation in 2 weeks so I don't want to fill the fridge with things we won't be using.

Curry? I pick up a jar of curry sauce/paste (Seeds of Change makes some decent ones, if you want organic and don't want to start from scratch) and toss it together with the thawed stew meat, then let it simmer to tender. Curry is usually better reheated, so I'll put it on after dinner one night, fridge it over night and have a super-fast dinner the next night.

We are knee deep in marching band here too!! :yay: I was very proud of myself yesterday. I am feeling under the weather, and planned to go to Outback for potato soup last night. Of course my family would want steak, and we'd spend easily $50. I made a huge pot of potato soup for about $2 and it was soooo good!

Tonight I threw a Mexican soup into the crockpot. Yum! All this week the parents are feeding the band camp kids dinner since they are there from 8:30-8:30. We will be there helping to serve each night. There is always enough left for the parents to have a plate as we are cleaning up. Monday night is also a mandatory meeting, Friday preview night and that will be potluck. I am thinking of taking mini cashew chicken salad sandwiches on Hawaiian sweet rolls.

Now with marching band season, school and work...we won't have time to eat out so I better get on track with weekly meal planning again! I love the accountability this thread provides!

Would you mind sharing you potato soup recipe? I have tried several and none of them were winners.

Love this thread. We are trying to stick to our budget to pay our house off early so eating out is something we decided to reduce to save money. Our menu goes Sat - Fri

Sat: Chicken Nachos
Sun: Hamburgers,baked beans, applesauce
Mon: Veggie Lasagna
Tue: Meatloaf, grean beans, pears
Wed: grilled tilapia, baked potatos, salad
Thur: hamburger stroganoff (use leftover meatloaf), carrotts, bisquits
Fri: BBQ Chicken, corn, pineapple

Last night we had leftovers. Tonight is steak with roasted potatoes, carrots, and salad.

Tonight is Orange Balsamic Glazed Chicken Thighs, Roasted Asparagus, and Mashed Potatoes.

Last night we had to go to a wake so we did end up eating out at Burger King.

Today is my first day as a stay at home Mom!!! :woohoo: :yay: :cool1: :cheer2: (Can you tell I'm excited?) So today I am celebrating by cooking a homemade spaghetti for my family.....something I usually only get to do on the weekends because of the time it takes!

Failed miserably last night. :sad2: Had a lot going on so we went out to eat, excuses, excuses I know! We spent 52 dollars...man that adds up fast.
We are invited to dinner at my brothers tonight, so that'll offset it some. UGH...very disappointed in myself!!

Last night I made meatloaf with a side of sauteed kale/spinach/peas. Lunch is leftover meatloaf, plain yogurt with blueberries and almonds on the side to put on top, and a side of Bubbies sauerkraut. I have NO idea what I'm making for dinner tonight.... it's just me since hubs has something going on this evening, so I'll probably do shrimp pasta, which is shrimp sauteed in a little bit of butter, onion, and garlic, on top of (gluten-free) pasta.

Last few days before we head out on vacation so we are eating down the fridge.

Tonight I'm using all leftovers to make a bacon wrapped chicken.

Kids snack today will use up all the odd bits of fruit and a lonely container of yogurt in smoothies

Tomorrow night is a potato tostado and ham and cheese omlets which will use up all the potatos, onions, Eggs, cheese and milk.

Then I'm not cooking or cleaning a thing for a week! Woot woot! :)

Yesterday we had a fun day off and ate out twice but it was k because we won a game at shaws and win money so that's what we spent it on a full day of family :cool1:

Tonight we are having grilled pork chops, with fresh squash and rice.

Fir dessert we are going to a brand new your guest place with some money from yesterday.

Tomorrow is either chicken or grilled pizzas whatever I feel like :thumbsup2
