Last night a good friend took us to dinner at Outback to celebrate his new job! :thumbsup2

Getting ready this morning to make my meal plan for this week and my grocery list. Not sure yet what we are having tonight. Maybe something for the grill since it's the weekend.
 
Tonight will be fajitas! Chicken fajitas with bell pepper and onions and Santa Fe Rice. Yum!
 
Getting down to the crunch. We leave for vacation in 12 days so I need to do groceries, but I don't want to do a full shop and have a bunch of stuff left in the fridge when we leave.
I will take a look at what we have and try to make lists using what is still in the freezer. The chest freezer is still half full.
 

Boy it's been a busy week. I know Tuesday we went out or the dy with the money we won but now I can't really recall what we ate but I know it's been here. With the winter coming up fast we budgeted and relizied that with my dh getting laid off for the intere may be short on paying our bills not good so now is crunch time to save more than ever. :sad2:

So today we are going shopping

This week looks like

Saturday hot dogs and pasta salad
Sunday pork and veggies
Monday spaghetti and salad
Tuesday chicken in the crock pot
Wednesday tacos
Thursday home made Mac and cheese
Friday dd's 6 th birthday! She has requested spaghetti and meatballs with a chocolate cake with chocolate frosting
Saturday her friends are over for pizza and a movie.
 
We did well last week! We are going out to dinner tomorrow night though. Last night was pot luck with the band. Tonight dh and I are going to a concert but behaving by throwing steaks on the grill instead of going out!!

Tonight- Steaks, baked potatoes, corn on the cob
Sunday- Out after BTS shopping! DD's choice!
Monday-Black bean quesadilla's, fresh fruit
Tuesday-Tuna noodle casserole, salad, fresh fruit
Wednesday- Shrimp, baked sweet potatoes, salad, fruit
Thursday- BLT's, chips, fruit
 
Tonight it's peanut chicken with jasmine rice. Left over meatloaf for the kids if the peanut chicken is too spicy.
 
For the Week...
Sun - Papa John's 50% off pizza deal (too good to pass up), fruit
Mon - Pollo Asada with Onions/Peppers (1/2 off at my supermarket:), Mango, Corn on the Cob
Tues - Cheeseburgers, Cucumber Salad, Blueberries
Wed - Garlic and Herb Pork, Mac and Cheese, Sauteed Apples
Thurs (Hubby's Pick) - Hamburger Helper Lasagna (with 96% fat free ground beef), Sliced Pears and Nectarines
Fri - Something Easy - Maybe Spaghetti and Meatballs, maybe pre-made Pork BBQ, salad, leftover fruit from the week
Sat - Out (Restaurant Week)

Picked up a rotissere turkey breast from Kroger, removed the skin and shredded it. Added one quart low sodium chicken broth, poultry seasoning, pepper, onion and garlic powder. Simmered while the rice (white) cooked and thickend it with a bit of cornstarch/water before serving. This is a go-to meal for me. Always good and on the table in 30 minutes!
 
Here's our plans for the next 2 weeks or so:

Sun: DHs company picnic

Mon: Grocery store night - free for all for dinner. Probably ramen noodles or something quick like that before we go to the store

Tues: Breakfast sandwiches, fruit, hash browns

Weds: Sloppy joes, Mac & cheese, fruit

Thurs: I'm going to dinner with a friend. DH and DD will have a date night

Fri: Dinner out

Sat: Chicken, bacon, mushroom, jack fajitas with corn on the cob, fruit

Sun: Stuffed cabbage

Mon: Chicken lettuce wraps

Tues: Meatballs and mashed potatoes

Weds: Crockpot BBQ chicken, parm noodles and fruit

Thurs: French toast with sausage links

Fri: Hot dogs, hamburgers and chips
 
Here is our menu. Our menu is Sat - Friday. We stayed on track last week and ate all planned meals (no deciding to eat out).

Sat: Steak, corn pudding, fruit salad, italian bread
Sun: Hotdogs, mac and cheese, jello, left over corn pudding
Mon: Pork chops, applesauce, green beans, italian bread
Tues: Spaghetti, salad, garlic cheese biscuits
Wed: Enchiladas, corn
Thurs: Chicken and Rice
Fri: Chili, grilled cheese sandwhiches
 
Chicken cooked in the crockpot with tomatoes,onions,peppers and sauce with a touch of Indian sauce for spice. Then served over white rice.

Last week turned out to be not-so-friendly to my meal plan. Was invited out to eat by my mom, then had an unexpected night out at the movies with my sister plus my bday dinner, so not enough budget-friendly home cooking going on at all. And going to the county fair last night sure DIDN'T help my wallet! :rotfl:

So anyhoo, tonight is soft taco night. Thinking tomorrow will be carryout pizza and I'll get to work on the rest of the week's menu tomorrow.

Busy couple days coming up for me; Spending wednesday with my younger sis before she leaves for college on Thursday (all the way to Nebraska! :eek: ). Mom & littler sis are going with her to get her set up, so I'm thinking DBF and I will do dinner a night or two over at my gram's house, so she's not alone and having just a sandwich for dinner, lol.
 
Tuesday--hot dogs, jello, homemade mac&cheese

Wed--chocolate chip pancakes and fruit

Thursday-- chicken nuggets and tater tots

friday--some kind of crockpot chicken

sat-- bacon,eggs, cheese breakfast bagels

sunday--sausage dip
