Tonight we need to pack for our weekend at the lake. I was going to just grab some take out for dinner, but DH wants to save the $$$ since we will be hitting drive-thru's while traveling, and also a pretty expensive seafood buffet for dinner one night while we are at the lake...sooooo, dinner tonight:

Scrambled Eggs
Bacon
Grits
Toast

Wednesday - Slow cooker Balsamic pulled pork (still need a side dish)

I would have to say something with sweet potatoes. Either cut them up and roast them or just bake them. They go great with pork AND balsamic.
 
Subscribing to this thread!! We are a family that has struggled way too long with spending too much going out to eat. We looked at our bank statement one month and it was almost $800 going out to eat!! We've gotten MUCH better, my dd (20) always has her boyfriend over, and my 8 year old nephew has come to live with us, needless to say our food bill has gone up and definitely can't afford the eating out! I need a support system!! lol~~~Oh, and I love to have an idea of how much the dinner I cook costs me, I always think "Hey, if we'd had gone to Casa Ole, we'd have spent 65.00, but I made this spaghetti and garlic bread for only $14.00". I'm a little nerdy like that!! hehe :goodvibes

Tonight:
Chili&Cheese burritos- the frozen ones and doritos $12.18 ***we'll even have left overs***
 
Today:

Lunch--pulled pork sandwiches and fruit
Dinner--pizza: pepperoni for DS14 and marinated fresh mozzarella and vegies for me
That's all I've got (not much of a plan but it gets me to tomorrow. We'll likely
have cinnamon rolls for breakfast if I make extra pizza dough)
 

Last night we had crock pot vegetabe beef soup with biscuits.

Tonight we had chicken parmesan burgers with chips and fruit

Hey all...

Does anyone here have any links to some awesome healthy crockpot meals or super fast and easy meals?

At the end of August I will be starting back at school and will have 1 class 4pm-6:50pm on Mondays and then 7pm-9:50pm on Wednesday and Thursday. On Mondays I would love meals that take almost no time to do (sandwiches, salads, ect) so I can throw it together when I get home. For Wednesday and Thursday I want to do something in the crockpot on one day so I can eat before I leave and mom can eat when she gets home. The other day would just be a "fend for yourself" day.
 
We had one of our very favourite super-fast meals tonight: You chop up one onion and about a pound of mushrooms, add a lot of chopped garlic, and saute everything in vegetable broth. Then add a large package of baby spinach, a handful or two at a time, until it all cooks down. Then eat! It's delicious, nutritious and very filling. (Serves two with some leftovers for lunch tomorrow.) We ate it with a side of sweet potato (half a potato per person), "baked" in the microwave, and topped with black bean salsa, and red grapes for dessert.

I have the opposite of healthy cooking in my oven now- a fried chicken cutlet stuffed with boursin cheese! smells yummy. I am also making rice and some broccoli.
 
We need to get back on track after weeks on vacation, and me on "maternity leave". Dd starts band camp next week, I am back to work and we will be back on our regular crazy fall schedule with band events/football games often. We spend so much on that, it's nice to cut back on eating out when we can!

Tonight- Salmon, spinach salad, baked potatoes
Saturday- Steak, corn on the cob, some form of potatoes
Sunday-Roasted chicken, mashed potatoes, yams, zuchini
Monday-Chicken tettrazini, green beans, watermelon
Tuesday-Chicken and dumplings
Wednesday-Tuna melts, salad, fresh fruit
Thursday-Black bean quesadilla's, fresh fruit

Tonight--rice and kung pao shrimp
Sat.-- bbq chicken, green salad, loaded baked potato salad
Sun--some sort of soup and rolls (or maybe I'll freeze the broth I need to use)
 
Tonight I am BBQing some Chicken Thighs with Potato and Onion Packets and Country Sourdough Bread.

Tomorrow will be Chicken Fajitas and Santa Fe Rice

Then for next week we have:

Monday: Grilled Burgers and Tomato Cucumber Salad

Tuesday: Grilled Chicken Meatball Skewers with Peppers and Onions and Rice

Wednesday: Balsamic Glazed Salmon and Sweet Potato

Thursday: Grilled Hot Dogs, Corn on the Cob, and Fruit

Friday: Chicken Fajitas with Santa Fe Rice

Saturday: BLT's, Fries, and Fruit

Sunday: Roasted Turkey Breast, Gravy, Cornbread Stuffing, Cranberry Sauce, Green Beans, and Rolls

It's a super simple week. I got bored! LMAO
 
Last night we had Wendy's as I pulled a double shift at work and my mom hurt her back.

Tonight we had a rotisserie chicken I picked up from Walmart, along with salad and fresh fruit

Tonight we are having grilled ham steak, baked potatoes, salad and blueberry crisp for dessert :)

Sun - Lemon garlic shrimp over orzo, cucumber salad, sliced cherries
Mon - Cheese and spinach ravioli, sauteed spinach with bacon, cherry/plum salad
Tues - Beef enchiladas with fixings, corn on the cob
Wed - Hot dogs, potato salad, mango/pineapple salad
Thurs - Manwiches with cheese, different potato salad, green salad
Fri - Bacon, egg, cheese sandwiches with hash brown potatoes and fruit smoothies
Sat - Out
