I have been struggling to come up with ideas lately. No clue why as I have hundreds of recipes, but nothing sounds good. Oh well, here is the menu for next week:

Monday: Crab Cakes, Shrimp Cocktail, and Salad

Tuesday: Reubens and Onion Rings

Wednesday: Grilled Teriyaki Shrimp Kebabs, Vegetable Kebabs, and Rice

Thursday: Baked Ziti with Spinach and Salad

Friday: Caprese Grilled Chicken with Balsamic Reduction, Corn on the Cob, and Salad

Saturday: Szechuan Style Stir Fried Chicken with Peanuts and Rice

Sunday: Glazed Salmon with Broccoli Rice

Already had to make a change due to my plans changing. Tonight is going to be a free for all as we had a big lunch. So, my salmon will be moved to tomorrow (I try to eat salmon at least once a week) and thus I needed to move the Szechuan Style Stir Fried Chicken with Peanuts and Rice to this week. Which in turn moved the Pepper Steak down two more weeks. I need 2 meals to finish out my monthly meal plan.
 
Wow, your menu sounds yummy, LilyWDW. We eat salmon once a week as well, due to it being in abundance here. Next week, my neighbors are going dipnetting. I would love to go too, but I won't be considered a full resident until the beginning of August (you need to live here a year to dipnet).

My menu, which will pretty much complete my "empty out the fridge/freezer of old stuff" goal:

Today: lunch--halibut gratin with sides of curry rice and salad (all leftovers)
dinner--breakfast for dinner--hashbrowns, ham, eggs

Sunday: lunch--chef's salad
dinner--caribou steaks, corn, potatoes

Monday: glazed sockeye salmon, rice pilaf, veggies

Tuesday: macaroni and cheese, beets

That's all I have for this week. Then I should probably hit the grocery store. I have somehow managed to nearly clear my freezers (not such a huge task since I just bought the chest freezer--but I did clear out the one that is part of the fridge.) All I'll have left is about 10 pounds of halibut and 6 pounds of king salmon (half regular, and half white). Ready to start filling the freezers up now that fishing season is in full swing, the u-pick farm opened today, and hunting season is just a couple months from now. :goodvibes
 
Got groceries today, so here's my week...
Sun - Chicken tenders, pasta spinach alfredo, strawberries
Mon - Steak fajitas, fresh pineapple
Tues - Turkey burgers with havarti, corn on the cob, tomato-mozza salad
Wed - Black beans with chorizo over rice, fritos for dipping, blueberries
Thurs - Hot Dogs, coleslaw, cucumber salad
Fri - Pizza or Hamburger Helper, fresh peaches/mango
Sat - Out

mmmm... the reubens & onion rings sound good! Did my shopping today, so I've got:

-Sun - crockpot beans, rice, & sausage
-Mon- out
-Tues -pasta skillet (chicken, various veggies, & alfredo mixed with cooked pasta.)
-Wed -tacos
-Thurs -crockpot bbq chicken, mashed potatoes, squash
-Fri - hot dogs with crockpot chili
-Sat -frito pie, maybe. I have a baby shower to attend so may make nothing & have dh & ds grab something out
 
Just starting reading this thread. I'm hoping I can put a menu together for next week.

Tonight we are having grilled cheese with bacon and guacamole
Monday oven roasted chicken thighs with burssul sprouts sauté with garlic and EVOO

Nothing set for the rest of the week yet. :confused3
 
Subbing for motivation to eat out less... Thanks for the great ideas!
 
We have no kids this week, they are with grandparents out of state. Sooo, our menu is sketchy.

Saturday:
Dinner at Arrington Vineyards...this was fantastic, but it was HOT!!! :crazy2:

Sunday:
We were supposed to have Tacos, but storms knocked the power out so here is what we actually had:
Lunch Meat Sandwiches
Chips and Dip
Clausen Pickles

Tonight:
Tacos we missed last night

Tuesday:
one day fast

Wednesday:
Stromboli
Tator Tots

Thursday:
Driving 3.5 hours each way to pick the kids up and bring them home, so dinner will be Cracker Barrel or fast food on the way home.

Friday:
Lunch Meat Sandwiches
Chips and Dip
Clausen Pickles...

So I can't belive how good I've been about eating at home:) better for the budget and health! Anyway I had five meals planned for this week and done all the shopping and now I have to change things because dh is not to eat meat,chicken or fish for TWO WEEKS!!!!! So I need some help coming up with a new meal plan.Does anyone have any great and easy:) vegetarian recipes?
 
Last night we had steaks with hash brown casserole, carrots, and salad

Tonight is breakfast for dinner: eggs, bacon, toast, and fruit.
 
Tonight is crab cakes, shrimp cocktail, and a big salad. Which is good because I don't have a ton of energy at the moment!
 
We are childless this week, for the first time in 21 years! We are planning to eat whatever we want, whenever we want! :rotfl: I have a bunch of stuff in the fridge/freezer and we plan to eat at home all week, but I am not making any formal menu's. Then the next 10 days we will be reuniting with youngest dd in Colorado for vacation. That will mean eating out every night! I'll be looking to join this thread again as soon as we return!
 
Tonight:

Sausage kabobs with zucchini, squash and baby bell mushrooms marinated in my homemade Asian sauce. Not sure if I'm going to have brown rice or yellow rice yet. :confused3
 
Hi everyone, summer has been soo busy but we've been doing good because there is no extra $$ to eat out..

last night we grilled pork chops and had rice, stuffing and green beans with it.
tonight we are having grilled chicken thighs, grillers (frozen ore ida potatoes) and green beans
thursday is a buffet - Hamburger helper & chicken nuggets for the kids, fish & shrimp for me and chicken tenders for DH with rice and green bean fries
friday is meatloaf, mashed potatoes, corn and salad - I am going to attempt to cook the meatloaf in my crockpot as it's supposed to be 90 and humid and I have no desire to run my gas oven for an hour while it cooks!
saturday we plan on being at the beach for most of the day so we'll pack a lunch and eatl leftovers or order out pizza
Sunday we are having family lunch at my gramps house - he is 89! I'll bring chicken thighs and breast meat in gravy and some cookies and my mom will bring all the sides and my sister will just show up to eat.. LOL ..
 
My mom's been recovering from surgery for the past almost 4 weeks so dinner has been all up to me for the past almost month. I do enjoy it though. Don't tell my DM but I think I'm a better cook than she is. ;) Our household is usually me, DM72, and DD12.5. A few days a week we also have my nephew3.5.

Last night wasn't too exciting. 3 of us had fresh chicken/spinach ravioli and I prepared a browned butter sauce with shaved parmesan and garlic/cheese bread crumbs. DN had Chef Boyardee Mini Raviolis. Also made salads with lettuce, carrots, home grown tomatoes and zucchini, home-made Ranch Dressing (from dry Hidden Valley mix). Usually I add homemade croutons (great use for leftover bread) but I smashed them up for the bread crumbs. Garlic toast with parmesan cheese completed the meal.

Haven't decided on tonight's meal yet. May be time to use up leftovers.

Let us know how the crockpot meatloaf goes. I've never done that, but it sounds like a good idea. I don't want to heat up the house with cooking it in the oven, either! :thumbsup2
 
So my first meatless week:) Mon. Pizza, Tues. Egg salad sandwiches Wed.Pasta pimavera, Thur. Breakfast for dinner(minus bacon & sausage) and tonight is stuffed shells. Nine more days to go before dh can have meat,chicken & fish:)
