They are just an easier way to make cabbage rolls, basically. Take outer leaves of the head of cabbage and steam them in micro til tender. You make your "stuffing" about the same as cabbage rolls: ground meat (turkey, sausage, beef, etc. I am using ground venison), rice, chopped bell pepper, italian stewed tomatoes, tomato sauce, seasonings. You cook all that in a skillet. Then you also add the rest of the cabbage chopped up and cook it till the cabbage is tender. Serve the stuffing in the steamed cabbage bowls. It's really yummy and pretty low cal too.

That's clever, I've avoided making cabbage rolls because I'm terrible at fussy things like rolling cabbage (really, you should see my pie crusts...). I think I'll have to try that next week when I have a chance to get some cabbage in.

Tonight was spaghetti pie.

Tomorrow is a bear of a day and I will not feel like cooking in the least. So unless dh is up to it when we are both done we will throw together a salad and order a pizza with the coupon we have.
If we can resist ordering out I can use that part of the budget out for breakfast this weekend or just not spend it at all and in to the trip fund it would go.
Maybe I'll try to put something together in the morning and not waste the money.

Are there any leftovers you could whip up? Today was looking pretty stressful until I realized that I have leftover homemade mac and cheese and plenty of the pot pie I made yesterday. Too bad tonight is usually our pizza night. :(

We ended up doing pancakes with chicken sausage. Yum!

Tonight is our traditional homemade pizza night BUT we made pizza earlier in the week in a fit of laziness and I have a ton of leftovers AND I'd promised the girls a picnic in the park (there's a farmer's market, too) today. So I'm going to give the family a choice: leftovers for lunch and a picnic snack or we have leftovers instead of pizza tonight. I'm so afraid of all that good food going bad in my fridge!
 
Tonight I am trying out a new oven baked chicken fajita recipe I found on Pinterest. We will have that and some chips and salsa. Well, the hubs and kids will have chips and salsa...I am too close to my calorie count for the day, so I will be having some green beans from the fridge with my fajita. :sad2:

Tomorrow is grocery day. Here is what my menu for next week will look like...

Saturday:
WW Beef Goulash
Steamed Asparagus

Sunday:
Creamy Chicken & Veg Pasta (made with neufchatel, yum!)
Garlic Toast

Monday:
Grilled Chicken Salad
Crackers

Tuesday:
Country Cabbage Bowls
French Baguette
(uuuummm~we did ChicfilA last night instead of this meal. :rolleyes1 In my defense, there were only three of us dining with 2 free chix sandwich coupons and a free kids meal coupon! :cool1:)

Wednesday:
BBQ Chicken Pizzas on Pita (will grill extra chicken on Monday)
Baby Carrots

Thursday:
Pasta Fagiole
Garlic Toast

Friday:
Tuna Salad (using balsamic vinegar instead of mayo)
Crackers
 
Just a heads up: it happens to be perfect picnic weather around us! Picnics are a great way to serve almost anything and scratch that I-want-to-go-out-to-eat itch. :)
 

Tonight was crazy busy at work, plus my pregnant boss passed out. Her husband had to come get her to take her to the doctor, and thankfully she is fine but that meant only two of us were there to close. So I had Wendy's for dinner.
 
Tonight is Cajun Chicken Pasta and Garlic Toast.

Is that like a Cajun seasoning alfredo sauce or do you do something else with the pasta? (I know I've had a Cajun seasoning alfredo sauce at a Red Lobster once upon a time, that's why I ask. :) )

Tonight's plan, since I have a ton of leftover pie crust dough and my husband brought home a pile of portabello mushrooms, I'm making "mushroom strudels," with a side of tomato soup and salad.
 
I had a friend who took me out to lunch so I had leftovers for dinner. Yay for two free meals!

So, I have figured out my menu for next week.

Monday: Jalapeno Popper Baked Stuffed Chicken and Southwestern Black Bean Salad

Tuesday: Skinny Vegetable Lasagna

Wednesday: Thai Coconut Curry Shrimp and Rice

Thursday: Hot Dogs, Fruit, and Baked Beans

Friday: Salmon Baked in Foil and Roasted Asparagus

Saturday: Sausage and Pepper Skewers and Corn on the Cob

Sunday: Poor Man's Steak, Mashed Potatoes, and Green Beans

Tonight we had grilled salmon and salad. We are trying to keep it a little lighter lately. I wanted a little something else later so for dessert I had a small apple with some peanut butter for "dip" and a couple of chocolate chips.

Grilled salmon and salad is one of my favorite regular meals and that dessert sounds wonderful!


I'm running a little behind today so I haven't decided whether I'm doing a small pork roast with shredded potatoes, salad, green beans, etc, or another roast chicken. I'm not feeling so hot, so I might plead off from the fancy meal with all the trimmings in favor of udon with fish or breakfast for dinner. :sick:
 
Last night was pork chops,tater tots and mixed veggie.I did buy a costco pizza $10 for the kids.My two boys ate one slice each and I freeze the rest for them,so I get four lunches out of it,not to bad right:) Tonight is bbq chicken,corn bread and salad.I still cant commit to a weekly menu but will try once school is out.I so need this thread because I feel guilty if I cheat:lmao:
 
Tonight I am making a grilled chicken sandwich with pepperjack cheese, guacamole, and tomato on it plus so sort of vegetable.

I am working on cleaning out the fridge. Sort of scared me when I was looking at expiration dates.
 
Well it's Sunday again. I usually grocery shop on Sunday but I am finding the stuff on sale is always out of stock and the store is jammed with people.
So, I've decided to switch the shop to Tuesday evenings, which hopefully will mean they have restocked. Ds also has soccer practice so I don't have to drag him along (he really hates grocery shopping).

So..
Tonight is hamburgers/veggie burgers/ foil potato and onion packets on the grill and garden salad.

Monday... Grilled Chicken, broccoli cheese rice, corn

Tuesday, Grilled Cheese and Soup so we can get out the door quick for practice

Wednesday, Roasted Chicken, Mashed Potato, Asparagus and Salad

Thursday..Spaghetti Pie?

Friday.. Potato Soup, biscuits and salad

Saturday..Wraps (ground beef, cheese, veggies, sour cream, refried beans)
 
Hiya,

I start Summer school tomorrow! Yuck! It's been in the 90's here the last few days. Nevertheless I made my hubby's favorite Arroz con pollo last night. We ate the leftovers for lunch today. Tonight we had brats and beans. Also this week I made chicken Caesar salad pita pockets and thin crust pizzas.

I have to make out my list today. Shopping is going to be difficult as I have school M-Th 10AM until 2:35PM then I work until 6. I will have to make lunches I can eat without heating. I only have a half hour between classes. Our store is huge and takes a good hour and a half to get through. Since my DH is off this week I am going to be using the grill a lot! Rather he is!
 
We met the extended family out for dinner for my cousins birthday. We went to applebees and I had a blackened chicken penne that I need to figure out to make at home.
 
I was off the rails this weekend but back on track tomorrow:

Monday: Baked Ziti
Tuesday: Orange Chicken
Wednesday: BBQ Chicken
Thursday: Some other kind of chicken
Friday: burger
 
Mon: Hot and Cold Sesame Noodles with Chicken (Rachel Ray's recipe) with Raspberries
Tues: Breakfast for dinner (Chicken Apple Sausage, Scrambled Eggs, Blueberry Muffins, Berry Salad)
Wed: Cheesy Beef n Beer Crockpot Sandwiches, Broccoli, Blueberries
Thurs: Loaded Pasta Salad, Cucumber Salad, Strawberries
Fri: Pizza, Sliced Apples (or leftovers)
Sat: Out

That Costco pizza is a killer deal. We get one dinner and one lunch out of the pizza for our family of 5.
