doing good so far. the lasagna and the spinach lasagna rolls went over well yesterday. tonight we had the baked fish meal i planned. it was really good and so easy. i have leftover fish packed for lunch.

If we have to eat out (like yesterday, we had a friend over to help us dispose of a broken dishwasher and move some furniture around), I love to find a good deal on take out!

I recently discovered my favorite Mexican restaurant in town does .99 cent tacos on Monday night! Last night we fed 4 people yummy tacos for 17 dollars. Plus they threw in 3 bags of chips and 3 cups of salsa, so we had leftovers. :yay:

Monday seems to be the night for specials though. There are several places in my town that give great deals on Monday nights. I wish they'd get together and spread them out so every night there's a deal like that somewhere!

I've noticed this too. Monday or Tuesday nights seem to be the night for deals on pizza or subs around here.
We rarely take advantage of them. Our real downfall is Friday. Fridays we're all up by 5 or 6 am and by dinner time nobody wants to cook and everyone wants to something a little bit fun for dinner. Friday is the night I need to plan and stick to because we always end up going out.

Oh I so agree! Friday seems to be the worst! But since it's a big going out night no one wants to offer a special. Friday night has always been my "date night" with my daughter. We used to always get delivery and watch a movie. But now that we're gearing up for Disney (:cool1:), we've vowed to make fun stuff at home (and watch a Disney movie of course!)

Good Plan!:)
I agree. If you make it feel special and pick something easy to make you'll be way less likely to fall into the Friday night out trap!

Took last night off and mom picked something up from Fresh Market. I pulled something in my shoulder and the thought of cooking made me want to cry. It hurts, it still hurts, but I am going to try and stretch it out some (per a PT friend).

Tonight is going to be the chicken fajitas.

Tonight we are having pulled pork (leftover in the freezer), baked potatoes, and veggie sautee.

Last week I was right on schedule, but this week has proven to be a little more tricky.

Monday night we wanted to treat a friend to dinner.
Tuesday a friend invited us to lunch and no one was really hungry for dinner so we did what I like to call "Fend for yourself" night.
Wednesday was chicken fried steak, mashed, gravy and sauteed green beans and asparagus.
Thursday (tonight) I'm making what I call Mexisagna in the crock pot.
Friday will be Build Your Own Pizza night (which usually turns out to be tell mom what you want and she'll make it for you).
Saturday is another crock pot day, it'll be some kind of chicken and cream cheese and whatnot concoction I'll make up that day.
Sunday will be (Turkey)BLTs with oven baked fries.

Not great, but not too bad.
:rolleyes1

Busy week this week too! So far we've had:

Chicken and mole pulled sandwiches with pinto beans
ate out on a Groupon last night
Asian bbq salmon and green bean foil packets on the grill
I have some kielbasa we may make with noodles
my famous Indian style cold chicken sandwiches may be in our future

Our wedding anniversary is next week but my hubby has to work. We may go out for dinner on a Groupon this week of course.

I am so looking forward to dinner tonight. We eat a lot of meals that involve diced or shredded chicken or ground beef...cheap meals. Tonight will be a treat for us:

Grilled Terryaki Salmon
Long Grain and Wild Rice
Zucchini, Yellow Squash and Onion Foil Packs on the grill
*Pudding Parfaits

Do you have a recipe for the bolded? Sounds like something mom and I would love and I am always looking for new salmon recipes (I eat it weekly).

Hi,
The bbq salmon recipe is something we always use. The marinade recipe is here and so is a recipe for salmon burgers. http://tinkmomfoodie-foodobsession.blogspot.com/search?q=salmon+
The only difference is we made little foil pouches. You can either do one per person with the fish on the bottom and the veggies on top, or make a big foil packet and cook everthing together. I brush the marinade over the fish first and then the veggies second. This time we used fresh green beans. Make sure you have enough foil so you can pull up and seal the sides. They cook for about 10-12 minutes on the grill. Check the fish for doneness. It should feel firm but springy.

If you don't have Hosin sauce you can substitute any regular BBQ sauce of your choice.

I also like to top with some more sesame seeds.
