Tonight we are having:

50't PT Mom's Meatloaf
Mashed Potatoes
Southern Style Green Beans
 
as planned, tonight i am making the pork chops with Dijon herb sauce (from skinnytaste.com), roasted green beans instead of broccoli, and baked potatoes. started back on weight watchers today. my day is going good so far.

we avoided tim hortons and subway as tempted. i just brewed a pot of coffee and made dd soup and a sandwich for lunch. tomorrow night will be breakfast for dinner for me as dd will be out with her boyfriend.
 
Tonight we had a homemade gluten free philly cheese steak pizza. It was my first attempt at this and it turned out really good. I also made a tomato and fresh mozzerella salad to go with it. Dessert is pumpkin bars made from the pumpkin my dd picked on her school field trip. I'm hoping they turn out because I've never made my own pumpkin before and it didn't seem as smooth as the puree you buy in a can.
 

tonight is jagerschnitzel for dinner with fries...

I also cooked Chicken enchilada soup and creamy baked spaghetti for the next two nights...

Hello, just a couple of tips, use a mixer or stick blender to puree the pumpkin once you cook it and than let it drain real good before you use it. Jack olantern pumpkins aren't as sweet as pie pumpkins so if you use it for pie you sometimes need to add a little extra sugar, but for pumpkin bars it will probably be just great.
 
I pop in sometimes but mostly lurk. We have been an absolute mess around here with home renovations, a cold that goes on forever that we have all had, and a disorganized kitchen. So for the past 5days dh and I have been off work and I sorted, tossed and carted stuff to goodwill. I organized my freezers and I am going to take this one day at a time.

So today I made pulled pork in the crock but we went out to lunch with some friends after bowling. Nobody was hungry for dinner so we will eat that tomorrow with corn on the cob (freezer) green salad and some baked potatoes done in the crock. We all had oatmeal and fruit for dinner tonight instead.

I need to get real about the eating out, every weekend we make it without eating out I am going to transfer that money to savings. Today cost me $60.00 including tip so that's the figure I am going to use. Bring it on. :lmao:

Thanks for the tip. The pumpkins I had pureed were pie pumpkins. I roasted and pureed following pioneer woman's recipe. I've had the puree in my freezer waiting to get used. The bars turned out really good!
 
I've spent the morning reading your thread! You all are so organized, and I need to be more so. May I hang with you for a bit?

Tonight we have a basketball game, so I need to find something for the crockpot. I'm thinking sloppy joes. :)

wednesday- porkchops, and sweetpotatoes w/ginger
thursday- roast chicken (i always do two when it roast them) and veggies
friday- chicken soup with the leftover chicken and stock. Maybe make noodles if i get organize
saturday- soup and leftovers for lunch, mexican casserole maybe.
sunday- no clue. have to check freezer.

Hope it is ok to jump in.
 
This sounds very good. How do you make them? We don't have that restaurant around here. Can you use dry black beans? I have a bunch but don't really know what to do with them. How do you make your quac? I love the stuff! Thank you for sharing!!!

Hi- Sorry I didn't respond earlier, I'm just now seeing your question. What I do is make a batch of "Mexican rice" in my rice cooker (just regular rice with a can of diced tomatoes combined with chicken broth instead of water, and with the additions of a diced jalapeno pepper and some chili powder) and also a batch of taco meat (we use ground turkey with the addition of black beans - which are either just a can or pre-plumped in my rice cooker and frozen). Both of these are loaded into a burrito-sized tortilla (which work better when warmed in a dry skillet) along with salsa, plain yogurt (instead of sour cream), and grated cheddar cheese. I don't make guac b/c even though I love it no one else in the family does. Sometimes I'll dice an avocado if I can find one for a good price.

That's it! Super easy and delish. The meat, rice and beans can all be made ahead and frozen, too, so it's one of my go-to busy night meals.
 
This week is going to be busy so I am not quite sure what it will actually end up as :confused3, but here is what is planned.

Monday : english muffin pizzas
Tuesday :whatever I find in the fridge ( going to the hockey game but will eat before I go) DH will be on his own
Wed: Turkey tacos and salad
Thursday : grilled chicken and green beans and salad
Friday: Dinner at a friends- we will probably bring an appetizer
Sat: Pizza - going to a friends house for a football get together
Sun: Pasta, salad, garlic bread
 
Tonight is cheesy pasta with shrimp & salad. I need to work on my menu today, we are still in "use it up" mode. Nice to see some new people, I just started here a few weeks ago, it's been very helpful!
 
Temps were in the teens in TN this morning...burrr! I put veggie beef soup in the crockpot for dinner, perfect day for it! I will make cornbread to go with it.
 
I'm really looking forward to life getting back to post-holiday normal around here! We did really well over the last week and a half only going out for dinner once and lunch once (with a living social voucher). Believe me, this is progress!

Here's my plan for the week:

Tuesday: "Greek" turkey burgers over feta risotto, green beans, pickles, salad
Wednesday: Split pea soup, pappadum
Thursday: Spicy kale and broth over pasta, garlic carrots
Friday: Thai red curry, rice, steamed dumplings, mandarin oranges

The best part of this week is that the soup and curry are already made and in the freezer. It's not a particularly busy week, but even so having those things done is a huge help!
 
I have been pretty faithful with eating at home and keeping a stocked fridge/pantry helps so much :thumbsup2

Tonight is home made pizza from scratch. I use a simple crust recipe and cover it with mozzarella, sun dried tomatoes, and a little bit of sauce. I will add a green salad to this.

Ugh... I KNOW! I hate the cold. By the end of the week we should be back into the 50's again!
 
yeah, I am in....

my week should be Saturday to Sunday but this week I was lazy and didn't shop until last night....

Monday - chicken parm and broc
Tuesday - chicken tacos, mexican rice, salad
Wednesday - Baked Potato Soup and Salad
Thursday - spicky chicken farfalle and salad
Friday - game night so , sands, piergoies finger foods....
Saturday - steak, potato veggie

whew a lot of chicken! but it was on sale this week.

And I am proud I brought lunch in both days! (I normally eat out every day!)

how do you guys store your frozen soup? in large baggies or ind containers?

I store anything that can be flattened when frozen in a baggie. Lay it flat to freeze and then stand it up and it will take up less space in your freezer.
