Last night I made a recipe from Chefs de France in Epcot for DH's Father's Day meal. It turned our FANTASTIC, but was very pricey to make, so it will continue to be a special occasion meal.

Tonight:
Veggie Fried Rice
Veggie Egg Rolls
 
Saturday - Burgers an fries
Sunday - Shrimp Po' Boy and Zapps
Monday - Artichoke and Spinach Lasagna
Tuesday - Chicken Salad
Wednesday - Pork Chops and salad
Thursday - Chicken Enchilada's, Re-fried Beans
Friday - Beef Brisket, baked beans, and coleslaw
 
I keep drifting away from this thread! I really need to make myself come here, it keeps dinner on track! Since school has been out we've just been enjoying the lazy days and dinner is just whatever I throw together ;)

Sunday- BBQ at the in-laws

We had quick chicken paprikash over noodles with salad.

Yes, do post the recipe! I have made chicken paprikash in the past, but it was not quick at all.

Dinner tonight:

Salmon Patties
Roasted Potatoes
Steamed Squash and Zucchini

Tonight we are having spaghetti with homemade turkey meatballs, salad, and garlic bread

I'm reconsidering what I'm doing with the chicken tonight...

We're having company so I'm making a savoury rice pudding with broiled chicken, pork medallions, mushrooms, and roasted stewed tomatoes (what can I say, people like them), a side salad, a treacle pudding, and a variety of quick veggies for the kids.

Sunday - Baked ziti with meatballs / salad
Monday - Burgers and hot dogs, pasta salad, fruit
Tuesday - Blackbean patties - left over pasta salad
Wednesday - Mexican rice casserole

Friday - Leave for Disney!!! :yay:

I made the recipe for the 50s Prime Time Cafe meatloaf last week and it was awesome! I hate meatloaf but this was really good.

Sun: Sliders on Pretzel Rolls (found at Costco)
Mon: Hamburger Soup
Tues: Kung Pao Shrimp over Basmati Rice
Wed: Feta Chicken with Cajun Red Potatoes
Thurs: Tacos
Fri: BBQ Chicken with Salad
Sat: hot dogs for lunch and Taco Turkey Lettuce Wraps for dinner
 
Okay, I did horrible this weekend because I wasn't at home for most of it. I have been helping my friend clean up the house so it is all ready to go when they get to bring home their baby. So, I have been cleaning nearly nonstop except for food breaks... and we were way too worn out to make anything so eating out was the best option.

This week I have family in town so I am cooking for 5. I am looking forward to seeing them, but not looking forward to cooking for them. My uncle likes to think he knows everything about everything and my aunt is a picky eater. Making a menu has been difficult, but I finally have something that should work. They will be here Tuesday through Sunday...

Monday: Ham Steak, Eggs, and Toast (this did not get made this past week as planned)

Tuesday: Garlic and Balsamic Pork Tenderloin, Salad, and another side

Wednesday: BBQ Chicken, Corn on the Cob, Salad, and Rolls

Thursday: Grilled Sirloin Steak, Baked Potatoes, and Salad

Friday: Baked Chicken Parm, Spaghetti, and Garlic Toast

Saturday: Pizza and Salad

Sunday: Soy Ginger Chicken and Rice
 
We did fairly well last week, but went out yesterday. I guess my goal isn't to eat at home every night of the week, maybe 5 to 6 nights a week is more realistic goal for us! This is my last week of working full time until maternity leave, I am so ready for that!! (Not MY maternity leave, I am a nanny!) :rotfl: Hopefully that will lend itself to more nights eating at home since I will be here to plan and cook!

Sunday- Homemade make your own pizzas
Monday- Shrimp alfredo, salad
Tuesday- Vegetarian mexican pizzas, fruit salad
Wednesday-Spaghetti, salad, garlic bread
Thursday-Cheesy chicken enchiladas, fruit salad
Friday-Turkey and swiss on rye, chips, fresh fruit
 
Last weeks menu did not all go as planned! I got myself a 3rd degree sprain ankle Monday, then had our cat spayed later in the week and she did not do well coming out of the anesthesia. So her and i have been resting in bed and dinners were quick and easy or take out.
Friday- grilled burgers
Saturday- corn dogs, chips and watrrmelon
Sunday- grilled ribs, baked beans, fried zucchini
Monday- shrimp, rice, veggies
Tuesday- chicken and dumplings, bread
Wednesday- grilled steak, maui potatoes, baked parm. zucchini
Thursday- eggs, bacon, Mickey waffles
 
I need to be involved with this thread! As I crunch numbers and prepair my "We can afford a Disneyland Vacation!" presentation to my husband I could use some encouragement with eating at home! Here is my menu for the week - based on sales at my local grocer.

Sunday- pasta carbonara
Monday- tuna melts, tomato soup
Tuesday- farfalle with zucchini
Wednesday- porkchop fried rice
Thursday- chicken with mustart sauce
Friday- sour cream noodle bake
Saturday- leftovers

As a family of 2 I like to leave one day for leftovers that can be moved to whatever day it works best. Even though we take leftovers for lunch we always seem to have more than enough food and I hate to buy a meal and not get around to making it.

Sunday - Baked mac n' cheese with ham & peas (ham and peas were left over from last night's dinner)
Monday - BLT's with homemade clam chowder
Tuesday - Left over mac n' cheese and chowder
Wednesday - Chicken, roasted red potatoes and baby carrots
Thursday - oven fried pork chops, stuffing, fresh broccoli
Friday - Sweet italian sausages with peppers & onions on sub rolls, tossed salad, chips
Saturday - Steaks on the grill, pasta salad, summer squash

Sun - Cheeseburgers, Corn on the Cob, Raspberries
Mon - Steak with Carmelized Onions and Mushrooms, Creamed Spinach, Strawberries
Tues - More burgers, Coleslaw, Strawberries
Wed - Out with family
Thurs - Hamburger Helper, Green Salad
Fri - Pizza, Fruit Salad
Sat - Out
