Anyone have recipes that they like to take with them camping. I hae my standard spaghetti & enchiladas but we will be gone alot longer than usual this trip so I need more simple, easy to store & cook recipes (the more dry ingredients the better-we have limited cold storage!)

One fun one that I learned this year is grilled pizza's. You take a tortilla, top with pizza or spaghetti sauce and all your favorite toppings, then pop it on the grill until the cheese melts. My kids LOVE these.
 
As a side dish slice potatos and onions about 1/4 - 1/3 inch thick. Layer the potatos and onions on foil. Add a couple pieces of butter (varies by amount and your tastes) and sprinkle with dried dill or other spice/herb of your choice. crimp up the foil around the packet, and then wrap in 1-2 additional layers. Place near coals and turn occassionally. Time of cooking will vary depending on heat and amount in packet(s). Ingredient amounts will vary depending on you appetites, and what you have on hand in terms of supplies.

Will you have access to fresh veggies? Or will you be wilderness camping? If you will have access to fresh veggies (only need lettuce & tomato) I have a recipe for a BLT salad that the only thing you'll need to keep in cold storage would be bacon, and some mayo

I also bring boxed mac and cheese. You don't have to use milk and butter as indicated. I mix in a can or two of tuna packed in water at the end, and use the water from the tuna as the liquid in the sauce.
 
Taco Salad - Give everyone a single size bag of fritos, slice it up the back, top with meat, lettuce, tomatoes, salsa, cheese, sour cream, olive, whatever you like! Very easy and very yummy! Clean up is a snap. If you cook your meat before you leave it's very fast, as well.

For dessert, we always bring a box of Twinkies, some frozen strawberries in juice and a can of whipped cream--Instant strawberry shortcakes! Then we also make pancakes for breakfast and use the strawberries & whipped cream for those too.

When the days are hot but the evenings are cool, we like this soup. Makes a big batch, about 10 cups.:

Mexi-Chicken Soup:
Brown some onion and sweet peppers in a bit of butter or oil.
Add:
1 (14 1/2 oz) can diced tomatoes with green chillis
3 (14 1/2 oz) cans chicken broth
2 cans (tuna sized) chicken
1/4 teas. cumin
a bit of salt and pepper

Simmer to let flavors blend. Can do this in a dutch oven in the fire, too.

That reminded me of this one.
2 cans kernel corn (undrained)
2 cans pinto or kidney beans (undrained)
2 cans diced tomatos (undrained)
1-2 packets taco seasoning mix (to taste)

Put all into a pot bring to a boil, simmer 5 minutes serve.
 
Two words.....Mountain Pies

These were a favorite of mine when I was a kid and we camped in our Pop-Up trailer. We usually made sweet ones when we were kids, but I'm sure you could do savory. Kind of like making your own Hot Pocket.

You do need the Mountain Pie makers, which I guess you could buy at a camping store. Ours are 2 long poles with cast iron pie makers at the ends.

We just took 2 pieces of bread, buttered one side and placed them butter side down into the pie makers, then add your favorite filling...We always brought a can of apple or cherry pie filling. Then you clamp the pie makers together and stick them into the campfire.....Yum-OH

For savory ones, try ham and cheese, pizza, leftover chicken, beef, etc.....
 
We call those hobo pies and it's the best part of camping.

We use them for any and all meals. You can use any type of bread or filling. we like the regular ones like cherry pie filling and apples and cinnamon for dessert or anything you can make like a grilled chhese sandwhich. We also have made wheat bread smores with chocolate and marshmellows. I've also made refridgerated cinnamon buns and biscuits in one. Sometimes we take the cheap little boxes of corn bread mix and add in stuff like corn or meats or cheese.

I got mine at a sporting goods store that has camping things. They even have double ones. If you look up camping websites they usually have recipe pages.

I'm so jealous. In my family I'm the only one who enjoys camping so I dont get to go that often. I told my family I'm going by myself next summer.

I think this is an awesome thread. I'm going to go through my recipes and see what I can come up with you. I'll look for recipes with lots of dry and nonperishable ingredients.

Over at the DIS Dinner Club (which you should all join because it's so much fun :goodvibes), Binny posted a recipe called "Binny's Snickers Salad". After I made it, I thought that this would be wonderful when you are camping because all of the ingredients are available typically at any corner store. So, if you won't be too isolated, you could run to the store and make this for a treat. It makes quite a bit.

This is from the initial post:

Ingredients

8 Granny smith apples peels left on, cubed

2 king size snickers bars

1 large box pudding powder vanilla fat free, sugar free (cheesecake pudding works great too!)

1 can evaporated milk (can also use fat free)

1 large container Fat free cool whip


Directions

add thawed cool whip, milk and vanilla pudding mix ( not prepared!) in a bowl and mix well. Pour over chopped apples and stir. Chop snickers bars and stir in gently. May top with nuts if desired.

Number of Servings: 10

this is a wing it recipe, a little more of this a little less of that... it works.

And this is my review and comments after making it:

We used 4 apples instead of the 8 that the recipe calls for. IMO, 8 would have been entirely too many. We couldn't find the king-size Snickers bars so I used four regular size ones; one or two more bars would have been perfect. I'm not sure if the cool whip was fat free or not.

The recipe says 10 servings and it is definitely right! This is a large dessert.

We served this in martini glasses with a cherry on top of each serving. An alternative name for this dessert could be Snickers Martini.

Snickers bars are my favourites, so I knew that this would be a pleaser for me. And we all really liked this dessert. It was fun to make and fun to eat. Our 14 year old dinner guest thought it was pretty special. I did find that a whole martini glass was too large of a serving but that might just have been because of the good-sized meal I had just finished.

As we were eating it, we were discussing all the different variations one could make of it, substituting different types of chocolate bars, different types of fruit, and different flavours of pudding. The only problem is, that no matter what you do, you end up with a large dessert. You could just use partial packages of pudding and milk but I think the rest would end up wasted.

And here's one more for you. It's called Jo's Mountain Mush. I haven't tried it but it sounds good. It comes from Allrecipes.com

8 beef frankfurters
3 red potatoes, cubed
2 (15 ounce) cans baked beans
salt and pepper to taste
1 teaspoon hot pepper sauce, or to taste

Coat a large skillet with non-stick cooking spray. Cut each frankfurter into 5 or 6 pieces and cook in the skillet on a medium-high heat until browned. Remove and set aside.

Spray the skillet again, return to heat and add the potatoes. Cover and cook on medium heat for 10 to 15 minutes, stirring occasionally.

When the potatoes are tender and slightly browned, add the beans and cooked frankfurters to the skillet. Season with salt, pepper and hot sauce. Heat until warmed through.
