Easy prepared meals at the camper or before you come!

The easiest one for me is a roast in my crock pot!

1 roast(sirloin, chuck, round)
4 large or 6 small potatoes quartered
1 bag of Carrots (sometimes I'm lazy and buy the ones already peeled)
1 onion
Salt and pepper
(If your real lazy you can buy 2 cans of potatoes and 2 cans of carrots to add to the roast. When I use the canned I let the roast cook for a couple of hours before adding)
1 or 2 cans of cream of golden mushroom soup.
Two cans will make it more like a beef stew with soup. You can eat serve this just out of your crock pot. Sometimes I like to take my roast (especially a round roast) out and slice it thin with electric knife. Use the left overs for sandwhiches.
This is about the only way I can get my family to eat carrots. Other things you could add would be to cut up celery or even tomatoes. My family wouldn't like it but I would.

When I know I am having alot of people another thing I do with a roast(beef or pork) is to cook overnight. The pork roast is good cooked in a little apple juice and water. The next day take all the fat from it & throw away and take the lean and shredd it. Stir in your favorite barbque sauce. (we love Sonys from Sams) Put back in the crock pot on low and serve with buns! The Pork roast is so moist I have just put the shredded meat back in the crock pot and served different kinds of Kraft to the side!

the crock pot is our new necessity for the camper. We even made a breakfast casserole in ours. Nothing beats having a yummy breakfast ready to eat when you wake up!

I'm not the poster you quoted, but you can find a large variety of Crockpot breakfast casseroles by looking on the web. I make them a lot, especially the kind that I oven bake. They're all delicious. Using a basic recipe of eggs and milk, you can add whatever ingredients you like. That's the beauty of it IMO. :thumbsup2

Frozen hash browns in bottom, a dozen eggs, whatever meat, onions, peppers, etc. poured over hashbrowns and topped with cheese. Cook on low 6-8 hours
 
We like to prepare meals like chili, mac n cheese, even fajitas before we leave. We prepare the food, then put it in a vacuum seal bag, then freeze it. When we get to the Fort, we thaw the desired entree and heat it up by putting the bag in boiling water. Easy prep and easy clean up.
 
I'm a big fan of foil packs. I bake them at home in the oven, then when they have cooled, pop them in a zip lock bag, label it with a Sharpie, and freeze. This keeps the cooler colder til they thaw at the campsite and I heat them up on a campfire or grill. We eat them out of the foil and save time on clean up.

Mini shepherds pie: hamburger patty topped with onions and mushrooms, mixed veggies, cream of mushroom soup & cheese, and mashed potatoes.

Chicken breast topped with mushrooms, veggies of choice, cream of chicken soup & cheese, and stove top dressing.

Unlimited variations....use your imagination and tweak to suit your family.

I often used left overs to make packs at home and freeze for future campouts: chili over rice, beef stew, etc.
