The easiest one for me is a roast in my crock pot!
1 roast(sirloin, chuck, round)
4 large or 6 small potatoes quartered
1 bag of Carrots (sometimes I'm lazy and buy the ones already peeled)
1 onion
Salt and pepper
(If your real lazy you can buy 2 cans of potatoes and 2 cans of carrots to add to the roast. When I use the canned I let the roast cook for a couple of hours before adding)
1 or 2 cans of cream of golden mushroom soup.
Two cans will make it more like a beef stew with soup. You can eat serve this just out of your crock pot. Sometimes I like to take my roast (especially a round roast) out and slice it thin with electric knife. Use the left overs for sandwhiches.
This is about the only way I can get my family to eat carrots. Other things you could add would be to cut up celery or even tomatoes. My family wouldn't like it but I would.
When I know I am having alot of people another thing I do with a roast(beef or pork) is to cook overnight. The pork roast is good cooked in a little apple juice and water. The next day take all the fat from it & throw away and take the lean and shredd it. Stir in your favorite barbque sauce. (we love Sonys from Sams) Put back in the crock pot on low and serve with buns! The Pork roast is so moist I have just put the shredded meat back in the crock pot and served different kinds of Kraft to the side!
