Easy maple syrup

This is good in a pinch

2 cups of white sugar....firmly packed
1 cup of water
1/2 teaspoon maple flavoring....
1/2 stick of butter or margarine

heat the sugar in a saucepan....add the water and bring to a full boil...boil for 2 minutes ..remove from the heat and add the flavoring and butter.....stir well.....store in the refrigerator.....makes 1 1/2 cups of syrup
 
Thanks, Pumba! I'm often in a pinch around here for pancake syrup. I guess we don't use it often enough, so that when we run out it gets forgotten on the store list.

You also reminded me of another alternative I've used - a fruit "syrup."

Fruit Pancake Syrup

1/2 c sugar
3 Tbl cornstarch
2 c water
2 c fruit, fresh or frozen
Bring sugar, cornstarch & water to boil, stirring constantly. Add fruit & simmer until tender.
