We have booked 2 nights at the end of our FL trip in Disney with 5 day park hopper. Since we are staying off site before the 2 days in the hotel can the tickets be started before we check in?
Like if the nights are the 3 and 4 can we get tickets that start on the 31?

You used to be able to do this, but not any longer.

You might consider buying your passes separate from your hotel. That would allow you to have your start date be whatever date you wish. This will affect your fast pass date as you have to be staying on site to get the 60 day benefit.

Your best bet is to book a room-only and then purchase your tickets separately so you can select a start date for your tickets prior to your WDW resort check-in.
