Me, too. My wife would appreciate it, and she wants to wear something that would look out of place next to somebody in just a button down shirt. To wear anything less would be disrespectful towards my wife.
DH wears a suit and tie too. Fine establishments, whether it be an upscale restaurant on a cruise or one in a big city, usually it's proper etiquette to wear a jacket. That's why Disney recommends it.

In the Panama Cruise, information packet, that arrived this week for me, it states that Palo is recommended for dinner to be the same as semi formal night and that includes shirt and jacket, tie optional. Suit is an option, but Jacket preferable.
