I'm not sure this itinerary has been done before. Just as a guess, I'd say night 3.

ADDED: you should be able to access your "My Cruise Activities" calendar and it will show when pirate night is.

I have already checked in for the July 24th cruise which is a five night double dip, and according to our cruise activities our Pirate Night is the third night (the night of our second day at CC). The last day is our day at sea.
