You can do it. Stick to your basics.
Ex: If you eat at Tomorrowland Terrace, they have a grilled chicken breast sandwich. If you ask them for it, they will sell you just the breast, no sauce or bun. Easy to calculate points for just the breast. They also sell a fruit platter. Again, easy to figure out the points.
Fuzzy Ex: There are places that sell eggs for breakfast. Get them as simply scrambled and the points are easy.
Ask, ask, ask for simply prepared modifications to the menu items with the explanation that you have strict dietary needs and they will be extremely accommodating. From there, use your points guide and you will be set.
Also, if you are planning on eating in any of the table service restaurants, let us know. The
Disneyland Head Chef's name and number has been posted here many times. He is VERY helpful if you call him ahead of time, discuss your needs, and let him know when and where you are dining. I had an entire meal prepared and served right along with everyone else at my table and not one of my first-time-meeting-fellow-diners had a clue that I had pre-arranged the entire thing.
It IS do-able. Now, staying away from Mickey ice creams on a stick, sigh, that's a different battle.
