Does it work this way?

I understand about the 180 + 10 window for making dining reservations if you are an on-site guest, and if you are an off-site guest, you make your ADR's day by day starting at your 180 day mark.

What if you have a split on- and off-site stay though? We are starting our vacation at Pop, and then moving to an off-site villa. Will the online system let me make 10 days worth of ADR's based on the initial Pop reservation (even though we aren't at Pop for all of those 10 days), or can I only make ADR's on the 180+10 schedule for each of the days we will be staying at Pop?

It should only let you book for the actual days you are at Disney, as far as I know, from things I have read here more recently.

However, a few years ago, I did book dining for both ends of a WDW/cruise/WDW trip all at the same time.
 
I sometimes do split stays. When booking my ADRs at 180 days out, the only ressie I enter is the first one, so they have no idea if I'm going offsite or onsite for the second part of my stay. I've never had a problem booking for the whole nine days I'll be there, even though the resort reservation I've entered is only for four nights.
