We don't need it this year and will get the 10 day with water park and no expiration tickets which we plan to use for 3 trips.

If we purchase AP this year before the increase and not use it for 2 years, will that be ok?

Pretty much, although in at least one recent year, there were 2 price increases. If you buy now, you'll receive a voucher that you can activate whenever you like.

The price does seem to go up every year. It is usually annouced and there are a few days to buy before the new pricing goes into effect.

Lately price increase has been annual. For a while in the mid 2000s the increases were coming faster than that. One constant is that APs usually go up the same time as all other ticket prices. If you purchase in advance and get a voucher, you have forever to actually pick up and activiate your APs assuming WDW is around forever.

I assume what you really mean is purchase an AP voucher, not the actual AP. If you purchase the actual AP it will be activated at time of purchase and expire in one year, even if you never use it to enter a park.

If you purchase by phone through MS or online, you will get a voucher rather than an actual AP and can have the voucher mailed to you for an additional $3 handling charge. Vouchers never expire so it will be good until you decide to redeem it for your AP. You can also use the will call option rather than have it mailed but I would not do that if I didn't plan to pick it up for a few years. Information has a way of getting lost whenever Disney upgrades their systems.
