It was on maybe 15-20 years ago. This chef (I think from Louisianna), probably in his 60's, always wore blue fannel shirt, red suspenders, and everything he cooked he put hot sauce in. He would also tell stories while cooking.

Been trying to find this, and can't remember his name or the name of the show.

I used to love how he'd jug the wine into the dish, then drink a swig straight from the bottle!

Oh yeah, I remember him. I always had to repeat "I guarantee" all the time. :lmao:

He cracked me up with his stories and how he would talk to the food. "You git on back in thar". Wonder if he is still around; he was pretty old back then.

Oh yeah, and then at the end he would go to the table which was all set, and open his bottle of wine, serve all the dishes he made and actually eat what he cooked! I never see anyone eat what they cooked on cooking shows!

He's gone. He died about 8 years ago. He had been sick, lost a lot of weight then he passed. My husband and I loved watching him!! He was our first love when it comes to TV chefs. Always has a place in our hearts, I gaw-run-tee!!!

He was one of the first chefs I watched when I was first married in the mid-1980's. He always said "I guarantee" and spoke with such a Louisiana drawl, it was quite new to this west coast girl.

Oh yeah, I remember him! I loved his Louisiana accent. Sad to hear he's passed on.

Loved his show. We have one of his cookbooks. It is pretty good!

Ok I answered my own question I googled for the commercial and found it (Ruffles Cajun Spice Potato Chips) and the beginning of the commercial has his name

Louisiana Cookin' was the name of his show. Is it sad that as soon as I read the blue shirt and red suspenders I knew exactly who you were talking about? :rolleyes1 I've loved cooking shows since I first discovered them.

He used to talk about "growing" crawfish in your backyard in an old wash pan. My grandmother wanted to do that, but never got the chance.

He'd add a little wine and drink some, then he'd rinse something out with a little more wine. It was always funny to watch his belly move while he was stiring.
