I have never made tomato soup.

But now that I buy gluten free soups, and seeing that a can of tomato soup is $2.54 at Meijer's I've considered making it myself.

I'm thinking of using tomato paste/sauce, heavy cream, and a bit of salt. What other spices should I put into it?

I would slow roast an assortment of tomatoes, veggies (carrots, celery, onion, shallot) and freshherbs (bayleaf, thyme. parsley, salt pepper) and then puree it in a stock pot. Then add a little heavy cream to taste. I don't think a can of tomato paste is going to turn into a very good soup.

My grandma and mom would make homemade tomato soup all the time. I take a bit of the cheater version but it's still yummy. I can't even imagine eating tomato soup out of a can.

1 can tomato sauce (I prefer hunts) or make your own sauce with just tomatoes, basil, evoo, salt and pepper.

equal portion chicken broth or chicken stock

I bring that to a simmer and pull out about 1/2 cup full. I add 1.5 - 2tbsp of sour cream to that a mix well. Then I start to add a little more of the hot soup mix to the sour cream mix to bring it up to temp without curdling the sour cream. Once it's as hot as the soup in the pot I mix it in. Serve with egg noodles. YUMMY. Somehow it gets a bit of a bite to it and it's so yummy. I tasted Campbell's once and it was GROSS ...

My mom and grandmother don't use a sauce, they boil up fresh tomatoes and puree those up. Yummo.

I make mine using either Centos canned tomatoes, or an organic can of Italian (preferrably Marzano) tomatoes.

I chop up onion and celery and sweat those in olive oil. Then I add minced garlic.
I add the tomatoes and cook this in a little chicken broth (about a cup). I add salt, pepper, basil, and oregano. I use an immersion blender to blend everything. Then I add heavy whipping cream until I get a consistency that I like.

I made this once. My kids loved it.

2 tablespoons butter
1 carrot, chopped
1 celery stalk, chopped
2 tablespoon onion, chopped
1 (28 ounce) can diced tomatoes, undrained
1 cup chicken broth
1/8 teaspoon baking soda
1 cup heavy cream
1 cup whole milk
freshly ground black pepper

Melt the butter over medium heat in a large pot. Add carrot, celery, and onion. Cook for a few minutes, stirring frequently. Add everything but the cream and milk. Cover and simmer for an hour. With a handheld blender puree mixture. Add cream and milk and heat through. Season with pepper. Serve.

Okay I am trying this next grilled cheese night...

I can just envision, fresh soup and homemade croutons, and a bit of parm cheese grated on....

Yum!

I make tomato soup regularly. I got the recipe from that show on Food TV- How to Boil Water. The episode was comfort food and it had the tomato soup and grilled cheese sandwiches. It's really easy and good.
