Does anyone know what days the Grand Gathering Events are held?

We are planning a grand gathering Dec 3rd thru the 7th. I am trying to plan some type of schedule. We want to do the fireworks cruise and the Epcot dinner. Are these held on certain days? or do they change every month/week? or by the season?
