Got our cruise docs yesterday, and in there they say no coolers except for medical related issues.

Just to verify: they do allow soft sided coolers as long as you don't pack them with ice, right?

We didn't have any trouble with our soft-sided cooler. We even checked it!

Just leave out the ice!!

We have never had an issue with a soft sided cooler. We even left it out each night full of beverages and the stateroom host/hostess would fill it with ice for us without our asking.

June '03 we brought a soft side as a carry on. As long as it fits through x-ray it's okay. The Security people even questioned me what was inside due to the plastic water bottles showing a funny picture on the x-ray. I honestly confessed what was inside, Water, Beer, Juices, Sodas, etc. No problem they said and we went on through.
The Cabin Stewards even leave a card out for when you would like ice service. I think it was morning, noon or night. I checked off morning and night and got what I wished for.

Just wonder: how come ice pads are not allowed?

What's an ice pad?

Maybe because they are filled with chemical? I'm not sure. I don't see how you would refreeze them, anyway. The beverage coolers in the room don't have freezers, if memory serves me.

I don't know why IcePaks would or would not be allowed, you just won't need them. Just take your beverages out of the fridge in the am of your cruise and by the time you get to your cabin put them in the beverage cooler or get ice from your cabin steward. Do not bring those IcePaks, they just are not necessary.
If you are concerned about the temp of your smuggled beverages, use your IcePaks or Ice for your trip to the Port and then leave/dump the ice in the parking lot or leave your reusable IcePak in your trunk. Your Cabin steward is all that you will need once onboard. Do not hung up on bringing "IcePaks" onboard.
