Then wait and see if the flights you want open up for the return flights? Right now our flight going is available and we don't want to lose it but I'm afraid if I book one-way the return flight we want won't open up.
What do you think? Yay or Nay??

Lots of travelers do exactly that. In fact, I've booked two different airlines each way just because I got great airfares that way. You should be fine doing it one way at a time.

I agree with goofy4tink, I alway book one ways, Next week I am flying USair from EWR and flying home Delta into LGA.
