Do people actually enjoy these attractions?

Tiki room - yes
Country Bears - Love it. Makes fun of us Tennesseans and our country and blue grass music, but it's good fun.
Hall of Presidents - good for history lovers
Carousel of Progress - I love this for what it is, a look into the past and the only attraction in WDW that Walt actually worked on.
Captain EO - pass
Journey with Figment - Do it only if there is no line.
Ellen's Energy - 45 minutes long. I probably wouldn't do it with young children
Living with the Land - nice relaxing educational ride. I like it.
Circle of Life - has a good message, but I would pass unless you are trying to educate you children on recycling and responsible use of resources.
Movies in the World showcase - a bit dry for kids, but I enjoy them immensely.
 
Tiki room - not our favorite but every couple of trips we check it out.
Country Bears - we seldom miss this one. Great place to relax.
Hall of Presidents - We like this - good heritage reminder for us.
Carousel of Progress - Haven't seen this one for years.
Captain EO - Wish I had never seen this but unfortunately we have.
Journey with Figment - Every trip.
Ellen's Energy- about every other trip depending on the timing.
Living with the Land - Every trip.
Circle of Life - We have seen it twice and not interested in seeing it again.
movies in the World showcase - Not every trip but close.
 
Last trip DS was 7, so FWIW, his take on those attractions (since it seemed you were asking more for the kids than yourself):
Tiki room - 2 thumbs up, and he was singing along the whole time
Country Bears - he wasn't impressed. In his words "it's okay I guess"
Hall Of Presidents- we missed this one this trip
Carousel of Progress - one of his all time favorites, he made up ride this MULTIPLE times.
Captain EO - I couldn't talk him (or anyone else in my family) into watching this with me...:confused3
Journey with Figment- 2 thumbs up, another one he was singing, and he wanted another ride
Ellen's Energy - we skipped it this time
Living with the Land - we skipped it this time (but he did enjoy it at age 4)
Circle of Life - we skipped it
Movies - we only did one, but my kids aren't really in to sitting still for a movie...especially DD!

I'm thinking about:
Tiki room This is a must do for us. We enjoy it, especially now that it's no longer 'new and improved'
Country Bears Sometimes we do, sometimes we don't, I was sad to see they no longer do the Christmas version.
Hall of Presidents Must do.
Carousel of Progress Every day we are in MK. DH's favorite.
Captain EO Meh, take it or leave it. We skipped it the last two trips.
Journey with Figment This is a favorite of ours. We do it every Epcot day.
Ellen's Energy DH and I would skip it unless we wanted a nap, but it's DS12 favorite. We did it twice last week because he loves it so much.
Living with the Land I enjoy this. I'm always interested to see what's growing in the greenhouse.
Circle of Life Take it or leave it. We watched in September, skipped it last time.
movies in the World showcase We usually skip them. If we could sit, we might do them.
 

I'm planning a third trip to DW. First trip my 3 year old was scared of everything so we went on very, very few rides. 2nd trip - we went on a ton and it was fun to see what everyone's favorites were. Me - Haunted Mansion, DH - food & wine festival 8-), 8-year old son - Test Trak, 6-year old son - People Mover (!!!)

Even over a week we couldn't do everything so I'm trying to include lots that we didn't do last time.
BUT... some of these attractions are really questionable. Do people actually enjoy them for what they are, or do they just do it for tradition or sentimentality??
Would kids enjoy them?

I'm thinking about:
Tiki room
Country Bears
Hall of Presidents
Carousel of Progress
Captain EO
Journey with Figment
Ellen's Energy
Living with the Land
Circle of Life

I can't speak to how kids will react, but I will say: Tiki Room and CoP are nostalgia kicks for me; love the "Great Big Beautiful Tomorrow" song from CoP. I love the movie in France because I love the great French classical music; I have yet to see the other 2 movies. I seriously have no memory of Journey Into Imagination (or whatever it's currently called) and I rode it in (I think) 2014. I like doing things like Living With the Land and Hall of Presidents sometimes, but don't think they're really kid-friendly. FWIW, Tiki Room is fairly short, and I loved it when I was a kid, so if you wanted to try one of these, that has my vote.
 
Tiki room: Not a favorite, we might go see it every third time we go
Country Bears: Love this its so corny that its fun
Hall of Presidents: Very well done but we will go here every few trips but not every time
Carousel of Progress: Yes this is a must do for us. Nostalgic and fun
Captain EO: Never, its tired and dated and now its being stopped before the end of year
Journey with Figment: Another must do. Figment is still my sons favorite character, and my son is now 32years old!!
Ellen's Energy: We enjoy this but its too long so we only go every few trips
Living with the Land: Yes we love this, very informative, very relaxing
Circle of Life: Nope we don't go
movies in the World showcase: Nope we dont go to these
 
On the list you mentioned, Hall of Presidents, Carousel of Progress and Living with the Land are three of my favorites! I've seen all the films in World showcase (did it while drinking around the world which might have increased the enjoyment hahaha!)
 
Considering that some people enjoy the ferry boats, monorail and trams... I'd say it's clearly plausible that some people will enjoy ANY attraction in the park.
 
We don't do anything on that list but Carousel of Progress, which, I love. I get made fun of but I don't care. I think it's great.
 
I do understand nostalgia but some of these are pretty bad....eg living with the land.
 
Carousel of Progress - DO NOT SPEAK BADLY OF THIS RIDE OR SUFFER MY WRATH!

Tiki Room - Though it was great as a kid and enjoyed it as an adult.

Country Bears - Once a decade suffices. Great for when the kids were little, especially the talking heads exiting the theater.

Hall of Presidents - We have skipped this attraction for a while. When the kids were little the back row was perfect for a break.

Carousel of Progress - Will not leave the Magic Kingdom without watching this fantastic creation of Walt Disney! A classic since the New York Worlds Fair. I am astonished that there are those that brush off this attraction.

Captain EO - Saw it once when it first came out and that was enough. Never again. Cannot understand why Disney allows this to continue.

Journey with Figment - We want Dreamfinder and the original ride back please.

Ellen's Energy - Interesting attraction to ride once, but that is it. Some years later we rode again and part way through we realized it was a mistake. We tried to figure out a way to discreetly get off the ride and sneak out. Takes a big chunk of your time at the park.

Living with the Land - Once is enough for us. Learned a little, enjoyed the boat ride, but nothing to cause us to stand in line to ride again.

Circle of Life - It has been a while, but I remember we thought it was an okay attraction.

Movies in the Word Showcase - These show beautiful scenes of the counties and their histories. All worth watching. Do miss the "Spirit of Norway" which I sat thought each time we rode.

There is not a single attraction above that would be a disaster if you took your kids to see them.

Country Bears--we've seen it a couple times...corny, but fun
Hall of Presidents--I really enjoyed it, but the kids did not
Carousel of Progress--no
Captain EO--ugh...not sad to see this one go
Journey with Figment--only if it's raining and we need to be somewhere dry
Ellen's Energy--never seen it
Living with the Land--YES!! This is one of our favorites...the kids even look forward to it
Circle of Life--once was enough
movies in the World showcase--we've sat through a few...we try to add at least one each trip
 
Tiki room--A family fave - every time!
Country Bears--it's been a long time since we've seen it but it's fun
Hall of Presidents--honestly I can't remember the last time.... a kid maybe?
Carousel of Progress--a few years ago went on it and it got stuck in "rotation mode" and we had to escape!
Captain EO--a great throw back... so now it can be "thrown back"
Journey with Figment--enjoyable - still liked the old version
Ellen's Energy--snore...used to like this but it's fallen into disrepair...
Living with the Land--go on it every time.
Circle of Life--circle the wagons and put it out of it's misery.
movies in the World Showcase - Like Canada. haven't seen France, China in years... maybe if it's raining... the circle vision makes me woozy!
 
I sit through the Country Bears just to see Big Al. We always ride Ellen's Energy Adventure mostly because it's a great place to rest. "Stupid Judy!"

Heading down with my BFF in less than 2 weeks and EEA is a must because her name is Judy!
 
Tiki room - Love this but don't do it every trip, only if we have time
Country Bears - so outdated it's not funny - literally
Hall of Presidents - I'm not American so really not interested
Carousel of Progress - Mom's favourite
Captain EO - Disappearing so not really a concern
Journey with Figment - Love this. Ride it every trip
Ellen's Energy - Great if it's raining out or you need to get out of the heat. 45 minutes of inside/AC
Living with the Land - Love going through the greenhouses and seeing the Mickey Vegetables
Circle of Life - One in a while when we need to get out of the rain/heat
movies in the World showcase - See above.
 
Tiki Room - Yes. We see it every time.
Country Bears - Yes
Hall of Presidents - Once every four to eight years should suffice.
Carousel of Progress - Yes.
Captain EO - Never saw it. (I will go see the Pixar Shorts)
Journey with Figment - OF COURSE! YES! We go more than once each visit. Have been known to use "Hopper" just to see him.
Ellen's Energy - Best 45 Minute Air Conditioned Nap at EPCOT. When you need to cool off and take a little break, never seems to be a line.
Living with the Land - Yes
Circle of Life - Never saw it
movies in the world showcase - Yes. We like to see as much as we can. Sometimes you learn something.
