Do I have unlimited fastpasses?

Like can I get a fastpass for Jungle Cruise, Big Thunder Railroad Mountain, Space Mountain, Splash Mountain, Haunted Mansion...then just browse Main Street and then return to all of my fastpasses?

Nope, doesn't work that way.

You are limited to one fast pass time until that window starts. Then you can get a second fastpass at another attraction.

For instance, I get a fast pass at Space Mountain. If it's morning but the parks are packed, I could find a time of 4:00-5:00. If I take that pass, I can't even get another one (say, for Haunted Mansion) until 4:00.

They aren't always very late times, but just be aware taking one fast pass time can eliminate using the system for a part of your day.

You can't get a second FP until the time window on the FP has started or two hours has elapsed, whichever comes first.

Also the fastpass will give you the actual time you can get your next fastpass as well.

I'm pretty sure Haunted Mansion doesn't have FP anymore, just a heads up.

Multiple Fast Passes can not be held. Check the return times carefully before you choose to get a FP or wait in the que.

A guest can have multiple fastpasses at the same time. The FP will have a time printed on it which lets the user know when another FP can be obtained. This time is sometimes earlier than the FP return time and earlier than 2 hours after obtaining the FP. I have held three legitimate FP's at one time and its possible to hold even more.

Yes - you can totally have more than one fastpass at a time. I think our record is 3 as well!! Just look at your fastpasses and they will indicate when you can obtain another one. Also, you don't have to return during the time frame on the pass - you can return later and they will let you on. However, you CANNOT return earlier - they will make you wait. Example - say you have a pass with a reutrn time between 1:00 pm and 2:00 pm. They will still honor the pass if you return after 2:00 pm - but if you get there before 1:00 pm, they will definitely make you wait until 1:00 pm. I hope that makes sense!! On our trip last summer, some guy overheard us discussing our plans about returning to certain attractions to use our fastpasses and he hold us about being able to return later the time on the pass. We were leary, but tried it and had no problem. Did it several times after that and it really helped since sometimes it was hard to get back during the time frame on the pass.

This is only half true.
As others have said, you can get another fastpass when the time window for your current fastpass has begun OR 2 hours after getting the previous FP, whichever comes sooner.

So say you get a FP for Space Mountain at 10:00am.
If the return time on the Space FP is 11:00 am (very possible if it's not crowded), then you can get another FP anytime after 11:00 am.
If the return time on the Space FP is 4:00pm, then you can get another FP anytime after 12:00 noon (2 hours later).

There are exceptions and sometimes the time printed on the pass that tells you when you can get another one will be sooner than normal. But the standard way it works is what I described above.
