Most of the Fantasyland attractions/rides are slow-loaders, especially Alice in Wonderland and Mr. Toad's Wild Ride. The Matterhorn Bobsleds loads relatively slowly, so it's usually best to see these as early as you can.
Space Mountain, Indiana Jones, and Pirates of the Caribbean are some of the "Must Sees." SM and Indy have FastPass. PotC loads relatively fast and can be seen in the middle of the day.

Hopefully Iago will never step foot (or wing) in DL's original version.

(Usually the Tiki Room can easily be seen in the middle of the day.)
RideMax.com only costs $15 (for 3 months) and it can be a helpful, fun planning tool (if you're into it). It also includes some general touring tips, and has some recommendations for the parades and fireworks. Despite what RideMax's itineraries say, be sure to start collecting FastPasses as early as you can.
