Disney with kids who don't meet height requirements

My kids didn't want to ride some of the rides even when they met the height requirements, yet there were some rides that they couldn't wait to ride. They rode Dinosaur when they were pretty young because DS loved dinosaurs. Neither would ride it again for a while. The mountains at MK were a different story. As soon as they were tall enough, they started riding them again & again.
