Chase has a policy of 5/24, which means they will turn you down if you have opened 5 cards from any provider within the last 24 months. So if you have room to add more cards, I would start with the highest value cards.
If you live in an area near Chase branches, you can still apply for the Chase Sapphire Reserve. It offers 3X points on dining and travel, and each point is worth 1.5x if you redeem it for travel. This card has an annual fee of $450, but the first $300 you spend on travel are refunded as a credit, so the net cost of the card is $150/yr.
If you apply in-branch before mid-march, you get 100,000 bonus points, which can be redeemed for $1500 in travel. There are other benefits as well. (If you are not near a Chase branch, you can get this card online with a signing bonus of 50,000 points).
To get the signing bonus, you must spend $4000 in the first three months.
This card can be good for
DVC members, because you can charge your maintenance fees and get 3x points, put money into a Disney Vacation Account with the card and get 3x points, (with the DVA**, you can buy park tickets, pay dues, pay for Cruises and ABD, pay for meal plans, etc.). Anything charged to your room (Magic Band) and paid for by the card gets 3x points. So you get 4.5% off some normal expenses as a DVC member if redeemed for travel.
In your case, since you like SouthWest, the Chase Rewards points can either be transferred to SouthWest, or redeemed on the Chase Travel Portal. You can decide on a case by case basis which is the better deal for you.
If you and your husband each get a Chase Sapphire Reserve Card, you would each get the signing bonus - 200,000 points, and then you each pay a net $150 annual fee. This can be a good deal if you could both meet the $4000 spend in the first 90 days requirement.
After getting a card like this, you can supplement by getting the Disney Card if you need them.
The Chase Disney card comes in two flavors, one with a $49 annual fee, and one with no annual fee. You get a $200 or $50 gift card, respectively, depending on whether you paid the annual fee or not after reaching an initial spend target ($500 for annual fee card, I think). There are some interesting perks and discounts, but usually they will be the same as either a DVC discount or an AP discount.
**Note: If you spend money on qualifying Disney expenses through the DVA, you get an extra 2% through a Disney Gift Card. There is conflicting information as to whether DVC dues are qualifying, but I will find out soon.
