Hello everyone
I'm going at the end of May and I had some doubts when I opened the reservation system today

Doubt 1: May 23 appears with full reservation for epcot. Does anyone have any information on why this is fully booked on a Monday in a week before holiday and when the 27th (Memorial Day weeken) which will be the inauguration of the ride is still available?

doubt 2: does disney operate with different capacities from weekday to weekend? I've been looking at this booking site and I noticed that it always sells out first on weekdays.

doubt 3: if two consecutive days of the week are sold out for all parks (example Tuesday and Wednesday). there shouldn't be a big difference in the queue in rides between these 2 days am I correct? Or would disney hotel guests be able to change the queue that much?

GotG will officially open on May 27. It's possible that soft openings may occur in the week leading up to the official opening and fans are making reservations in anticipation of that.

It's also possible that Disney reduced their normal number of regular park reservations because they have scheduled preview dates for CMs, AP or DVC members or they have a media event for GotG planned for that day.
 
People are booking Epcot for GoG thinking there may be some sort of soft opening I guess. With Remy previews, they added a park reservation for Epcot to your account after you signed up for your preview spot. I think they would do the same for GoG

My guess is Disney lowered reservations for previews. We are planning on hopping there that night for Deluxe Hours so hopefully they will let us in 😬

Yes, as @Marionnette points out, Disney may have intentionally reduced the number of available park reservations for those days or closed those days to booking in anticipation of previews and of crowds hoping for soft openings. Having GotG opening on May 27 makes that week an unusual week and means that the usual forecasts are meaningless.
 
Plus, don't forget you are not seeing all the different "pools" of reservations.
AP reservations, for those without resort stays, are booked for May 27th.
To get a full picture you have to know all the variables and you simply don't know them
Some of the things you need to know are
Total number of reservations Disney offers on a given day
and then the break down of that total with the total number split for AP, AP w/Resort, Tickets, Tickets w/Resorts
Point is, it's pointless to analyze park reservation availability based on what you are looking at
