Wife and I needed to be in Sarasota for a family party in November, and decided to fly in/out of Orlando to save some money and spend a few nights in Disney. After a lot of back and forth on what made the most sense we decided to spend 3 nights at SSR (renting DVC points), and to forgo any park tickets, enjoying activities outside of MK, Epcot, DHS, and AK. So.....what are we going to do, and how can we do it cheap?

Here are some ideas we've been kicking around:
  • Jellyrolls
  • Trail ride at Fort Wilderness
  • Mini golf at Fantasia Gardens, or at CityWalk
  • A day at SeaWorld
  • A day at Typhoon Lagoon
  • Disney Quest (or Dave and Busters)
 
You could "tour" all of the resorts and go to Downtown Disney.

Think about how you will get the most bang for your buck.

Jellyrolls has a cover charge. I think I paid $12 per person in June. That doesn't cover drinks or tipping the pianists. And it is only open from 7 pm until 2 am.

The trail rides at FW last 45 minutes and cost $46 per person.

Fantasia Gardens will cost $12.50 per adult per round of mini golf. You're not going to fill a day with mini golf, even if you do both courses.

Sea World tickets are $75 per adult (online) for single-day tickets. Plus parking.

Typhoon Lagoon tickets are $55.88 per adult for a one-day pass. The park closes at 5 pm in November.

Disney Quest is $43.67 per adult. It can be a lot of fun but can you spend more than 3-4 hours there? Some people can but not everyone can fill a day with indoor arcade play.

Now, compare that with a 4-day park ticket from Undercovertourist. From opening to close, you get your entertainment for $64 per adult per day. Cheaper than a 1-day ticket to Sea World. Just a little more than the cost of a TL one-day pass. And more hours of fun for your dollar when compared to miniature golf and the trail rides.

Everything that you listed sounds like a lot of fun and I've done most of them. (DH refuses to get on horseback.) But if you're looking to keep costs down, I don't think that a non-park, a la carte approach is the way to do it.
 
If i were at SSR, i could spend 1/2 day at the spa... but not cheap!
ripley's ,gatorland are not badly priced.
Rock springs is cheap, but might be cold.
a day of fishing at cape Canaveral could be fun.
or maybe a 1/2 day fishing trip.
maybe a day at discovery cove, that gives you a free day at seaworld or busch gardens
or i would check out boat rentals at bay lake and lots of activities at fort wilderness, such as catch and release, archery, fireworks after dinner at trails end.
 

i think you could spend a day at ssr being entertained with community hall, horseshoes,tennis, cookout dinner, lunch at dtd, and the pool activities.
