Disney Mom surprises?

My mom and I will be returning to WDW for the first time in 10 years for the Disney marathon weekend This trip will be full of firsts for us (first time just a girls trip, first 5K for her, first Dopey challenge for me) so I want to do something special and surprise her. Any help with ideas would be greatly appreciated! I am thinking of maybe dinner at a fancy restaurant? We'll have park hoppers for most of the trip, and her favorite park is Epcot if that helps! TIA

They do hour long cruises if you look at the other boards. Maybe someone has space for the two of you.
