Disney Meal Plan and Other Suggestions

Sorry if this has been posted before (im sure it has), i've looked around but just couldnt seen to find it. Im looking to go to disney world in early june and I'm on a tight budget. Im looking to go for 4 nights, 5 days. I want to stay in Coronado Springs or Caribbean Beach Resort ( Which of the 2 do you guys recommend?). I've been pricing the vacation deals out on disney's website for the past couple months and it looks like the best I can come up with is roughly $1400 for 4 nights with tickets, no water park passes and no meal plan. I've been told by a couple friends that went to disney recently that the meal plan is great. I've looked at the prices with and with out the meal plan. With the Deluxe meal plan (3 meals and 2 snacks) it added about $600 on to the total. Is it worth it to consider MYW package plus dining ( 1 table, 1 quick service, 1 snack)? For those of you who have experienced the deluxe, how much more money did you spend on food beside what you put out for the meal plan?

All I can really add is, we stayed at the Caribbean Beach Resort last year and love it. We like a lot of privacy and really had it there.

Also, I have not yet booked my hotel / tickets yet and thats what i plan on doing first. When you make your payment, is it possible to make payments over time? Or do I have to put everything up front?

what you have to think about is how much time do you want to spend eating. If this is your first trip, I wouldn't do the deluxe plan because you spend a large amount of time sitting and eating. If you have been on several trips and enjoy eating sit down meals I would go for it, if this is your first trip I would go with a couple of sit down meals and go with counter service the rest of the trip because its quicker and gives you move time in the parks.

I usually make an initial deposit to my package and make a payment every month. I have never had a problem handling like that and I like it like that, it is sort of like a "vacation on layaway!"
 
Thank you all for yours tips and input so far! I'm just finishing up school so I only have 1 credit card and the max is $1,000. Is there a way for me to use my credit card as a payment right now with the max on it so low? Or will have to try to convince my bank to increase the maximum allowed on it?
 
in terms of Dining, who is all in your party? We did the basic, and found it was plenty of food. We used our snacks for a quick BF at our hotel(bagels, yogurt) and did TS for all dinners. We had 2 adult,1 kids, so we easily could share our counter service meals between us. There really is alot of food especially as you also get dessert (ice cream sundaes at the resort ;) )
I don't think i could do the deluxe package. We also had a fridge so we did have some other snacks there to tied us over.
