Can this be done for the final payment on a cruise also?

You can use gift cards for all payments for your cruise, starting with the deposit. Just make sure to keep the cards in case there is a refund. We have paid for multiple cruises and added stateroom credit to cover tip, excursions and other anticipated expenses using discounted gift cards.

If you are using the Canadian gift cards, you have to call in to apply the payment from the gift card. The online system won't let you apply them as it doesn't know the exact amount on the card...
