My adult daughter and I will be going only for 2 days to mainly enjoy the Christmas Decor. Arriving around 11 staying at the GF then hopefully can enjoy the pool until check in.

We are going to have to plan wisely. We were only going to go to Disney Springs but now that they for sure are having the Christmas Party I am considering that and maybe do DS the last night but also want to be back in time to watch the fireworks from the GF. Is the electric water parade every night and does it go by the GF? Recommendations on where to eat during the Christmas Party and also DS. Thanks.

The electric water parade ran every night that we were there in December 2021. We had a lagoon view villa and it passed right by our room. We just watched it from our balcony but anywhere along the Seven Seas Lagoon will give you a good view.

I would not eat dinner during the Christmas party. You're paying too much for the privilege to be there. I would either grab quick service before the park officially closes at 6:00 (mobile ordering is your best friend) or I would get an early dinner at one of the monorail resorts. Kona Cafe or GF Cafe are both adequate TS for an early meal. Captain Cook's or Contempo Cafe are decent QS meals.

DS has so many good restaurants that it's difficult to recommend just a few. A lot depends on your taste and budget.
 
Personally I would do the Christmas party and spend the rest of my time enjoying the resort. We aren’t big Disney springs fans though. As for dining I would plan a late lunch on the day you do the party and plan to be at the park by 4pm. Being at the GF I would consider Kona at the Polynesian, maybe storybook dining at wilderness lodge or just grabbing something at the pool or a quick service place before heading in. I wouldn’t spend party time at a sit down meal.

I’m not much help with Disney springs dining. There are a ton of great places we just don’t tend to make our way over there. Enjoy your trip!
 
Electrical Water Parade is every night and does go by Grand Floridian.

During the Christmas party most of the special foods are desserts. Don't waste your time on a TS restaurant, just get something quick at your favorite QS. Mine would be Columbia Harbor House or Casey's Corner.

For DS, Jaleo is my favorite place. Homecomin, the Boathouse, and Wine Bar George are also very good. All of these places are open for lunch or an early dinner, so plenty of time to get back to GF.
