Thanks, Elin. Mom never actually had a recipe for Pfeffernusse -- and she calls herself a 1st generation American! She gave me her recipes for Angel Kisses and Rum Balls instead. No, I won't take the Rum Balls in to work, although it might make for an interesting day! (I was stunned to learn that they don't go in the oven at all -- no chance of the alcohol being burned away. 1 bag semi sweet chocolate morsels (12 oz)
1 bag peanut butter morsels (12 oz though 10 oz will work)
2 tbs butter or margerine
2 cans sweetened condensed milk (14 oz)
You need 2 medium sized glass bowls and a 9 x 9 pan. I usually use glass, but I don't think there is a reason for it.
Completely line your pan with aluminum foil.
Place one bag of morsels in a bowl. Add one can sweetened condensed milk and 1 tbs butter. Place in microwave. You need to melt the chips and all microwaves vary in cooking times. Try 1 1/2 to 2 minutes and stir. Place back in microwave in 30 second intervals removing to stir until mixture is smooth. Pour mixture into pan.
Repeat above step with other bag of morsels. Pour on top of previous layer. Let set up (I usually put in fridge to move things along). Once set up you can remove from pan by pulling up on the aluminum foil. Peel the aluminum foil off and cut into peices.
** I have used many different kinds of chips with various levels of success. 2 layers of chocolate works or 2 layers of peanut butter. I've done a layer of mint, rasberry, cherry, butterscotch. The only one that wasn't good was cinnamon. We get flavored morsels at King Arthur Flour.
