Hi, just wondering how easy it is to get to other attractions, especially evening dinner shows from disney's all star hotels without a hire car? Do the hotels have taxi ranks & will the taxi's arrange an after show pick up?

Welcome to the DIS boards!!! You have the ability to have a cab called at any of the WDW resorts. I can't say for sure as to the 'correct' way to have them get you back to your resort at the end of the evening though.
 
Most of the other attractions have a Mear's Transportation taxi stand to get you back to the resorts. There are some of the stands that do not have Mears cabs so I would suggest you make note of the meter reading when you arrive and use that to decide on transportation back to the parks in the case of the vehicle not using a meter. If you wondering about a particular attraction and the transportation service, inquire with the attraction name and I will probably be able to let you know the arrangements.
 
Cheers, we're planning to go to Seaworld for a day, hoping to get there early and leave late but as we've got a 3yr old with us, you never know how he's going to be so it feels a bit more flexible to use taxi's rather than book a shuttle or such, and one evening to Medieval Times (earlier sitting), so hopefully should be straight forward as very mainstream attractions.
We've found in previous trips to the US that taxis tend to be the easiest way to get around as a family. Do there tend to be enough at the end of the night at both attractions or can it be a long wait? Is ther a Mears stand/desk at the All stars or do we need to give them a ring to pick us up?
(First time to Florida if you haven't already guessed!!)

Mears taxis serve all the Disney resorts. Usually there are taxi around during the evening. If not just have the bell stand call you a Mears cab, specify because some of the Disney bellman will try to make a few extra bucks by calling their friends who pay them a commission.

At Medieval Times I am sure there are Mears taxis on the stand, but it is not an exclusive stand. If you come up to the first in line, request a meter run and if no meter just walk back to a Mears cab, Checker cab spelled the way I have written it, and say you want to use them. There are several companies in Kissimmee that dress up a vehicle exactly the way Mears is and hope you think it is a Mears. Two of the companies I know of are Checkher cab or (a check) Her cab.
