Dinner that travels well and is easy

We're going to my parents house this weekend. I want to bring dinner with us but something that's not too difficult to make and easily taken on a 1 1/2 hour drive. Any ideas? If at all possible, no marina sauces. My dad has bad acid reflux.
 
Crock pot meal of some sort, like Beef Stew? Bring bread and salad fixings and you've got a wholesome, filling, winter meal.
 
I usually bring swedish meatballs, they travel well and can be made ahead of time even frozen
 

This is real fancy I know...(not really) but how about a box or two of Banquet Fried Chicken. Cook it ahead of time and bring some mashed potatoes in a casserole dish along with a salad.
 
3-4 lb pork roast, trimmed
2 cloves of garlic, minced
1 can whole jellied cranberry
1/4 cup brown sugar
1/2 cup apple juice
2 apples, cored, peeled and coarsly chopped

Rub minced garlic over pork roast and put in crock pot
Mix cranberry, brown sugar, apple juice and apples and pour over it.

Cook in crock pot on low for eight hours. I serve it over rice.
