Dinner party/recipe help!

I would do a lasagne or a baked ziti. You can prep it ahead of time and stick it in the oven. Serve with a salad, bread and butter. Done.
 
Weird that they would have confirmation during Lent??? I would go with a soup or meatless pasta dish. They are easy to make ahead of time and can stay warm during the ceremony.

All the confirmations I have been to have been during Lent - typically the weekend before Easter.

OP - what about beans, rice, and nacho/taco fixings?

Or pastas with choice of sauces, then some sauteed veggies, shrimp, cannelini beans on the side as a pasta bar? Salad and bread.

My confirmation was during Lent. Easter was in later April that year and I suppose that's when the bishop had time in his schedule.

Is pork considered meat? I'm not Catholic so I don't know. If it's allowed, jambalaya with ham and shrimp is easy; otherwise, just use the shrimp.

We're catholic but we only abstain from eating red meat, (but for that matter cut out all dairy by Easter :) if you practice that you could do a chicken taco braid? I've had lots of success with this for dinner parties...

Yeah, different Catholics have always had different interpretations of the no-meat rule. Some consider chicken as meat, others don't. Our diocese considered land animals to be meat, so only animals that lived in water were OK to eat. Fin fish, shellfish, octopus, etc. I suppose aquatic reptiles like snapping turtles too. I wonder how they felt about gator.

Yea pork is considered a vegetable. Perfectly fine. Get scallops and wrap with bacon. Totally vegetarian

The scallop cancels out the "meat" in bacon. Go for it!!



OP, we like vegetarian stuffed peppers. Slice in half lengthwise and fill each half with a mixture of rice, diced tomatoes, sauteed diced other veggies, beans, chickpeas, shredded cheese, etc. This can be made in advance and be baked day of party.

Eggplant Rollatini or Parm, minestrone or other vegetable soups, etc. can also be made in advance.
 
Here is the issue with the lasagna, it takes at least an hour in the oven, more if you have to do 2 pans. It is not really a "quick option" imo.
 
OP - you have a busy day planned. I have to admit that for me, if ever a smallish family and friends party called out for pizza, this is it. Pre-order several gourmet pizzas with various veggie toppings to be delivered at the appointed time and have a gorgeous salad and shrimp cocktail appetizer pre-made and ready to go. Go all out on the dessert making something home made and yummy that you can fully prepare in advance. I would never consider this for a big party but family and close friends will certainly not judge when you have such restrictive circumstances.

It's news to me that Catholics can decide what is meat. The description you gave - flesh of land animals - is what everyone considers meat. So chicken is meat. Pork is meat.

If you have a oven with a electronic "thingamabob" panel, it's easy. I did it one Easter. popped it in the oven straight from the fridge, set the oven cook time to start and gave it 2 hours on a low temperature. it was nice and warm.

You do have to be ok with the oven being on while your out the house. My dh hated that.

My DH hates it too, but I don't mind. The oven has the delayed-start option for a reason, right?

That's a good thought too. There's a restaurant in my town that does great Greek, veggie, and spinach-artichoke pizzas; I could get one of each to go with the pre-prepared appetizers, salad, and desserts. Maybe a plain cheese too, in case some of the littler kids (my 6yo, her 7yo cousin) don't like the toppings on the gourmet pies. That would definitely be the easiest option!

If she is at home right before the confirmation, I guess that would work. I am assuming she would be at home to get ready and then go to the confirmation.
 
They changed the no-meat rule to 2 days Ash Wednesday and Good Friday. That's how it is in my church. The same church I attended as a child, when it was no meat on any Friday. It was also the same church that I had to pin a tissue to my head if I forgot my veil/hat. My 6 brothers had a field day with that one.
 
The no meat on all Fridays still stand in our archdiocese, though fasting is only required on Ash Wednesday and Good Friday.
