Will all of the dining credits be on one card? I am asking because we have a 17 yo nephew going with us and he may want to go off separately. Will he have his credits on his own key?

The dining credits are pooled into your account. Every room key has equal access to the credits on your account.
Room charging privileges can be limited to certain cards. (So if you want him to not have access to charging items back to the room - you can restrict his card so he can't charge souvenirs, etc back to the room)
