In 1976, my first trip, I remember going to the DHR and I am trying to fill in some holes in my memory. (I was a 14 year old DS at the time and I think the Can-Can girls may have been too much for me)

I remember having to get reservations as soon as we got into the park. I sort of remember the show but how did the meal work. I not sure whether someone in your party got your food and brought it to your table on a tray or by a server.

The strange part is that I remember getting sandwiches on plain white wonder bread cut in half and wrapped in saran wrap and there was limited selection to like only ham and cheese. Which at the time I only ate baloney.

I have seen a historical site but it didn't seem to answer my question,
 
I think you are correct - we did this in 1987 spring time I think. I remember the sandwiches, and having to go somewhere on Main Street to make the reservation when we entered the park. Yes, and the can-can girls.
 
There was no longer a show in the Diamond Horseshoe Saloon when we were there in July. We ate lunch there and there was a sign saying there is no show.
 
We took our boys in 1989 and I seem to remember making reservations ahead of time. What I do remember was that it was a very simple menu of sandwiches, chips, drinks. The show was good and our boys (3.5 and almost 6 at that time) loved it. We were in the balcony (I think all the seats were) and yes they had servers. I'm pretty sure they had pb&j, and a couple of other choices for the sandwiches, but it was a very limited menu. Great place for lunch with kids.

They did away with the lunch and show years ago and at one time used it as a character greeting location. Now it's used during peak times a couple of times a year for a buffet dinner location. But, the show has been gone for years.

I think it was actually the Diamond Horseshoe Jamboree when we saw it, but it had several variations during the years it was open.
