Deciding which ticket, please help

We are staying offsite the week of May 13, and I am debating on 2 day park tickets or 1 day park to park tickets. We are not roller coaster or big thrill ride people, and we do not have children. I was wondering if we got there at park opening could we hit all of the other highlights in one day at both parks? Thank you.
 
I always think more time is better and 2 day park to park would be great. But, is probably do 1 day park to park in your shoes.
 
Remember that you can't ride the Hogwarts Express without a park to park ticket as it takes you from inside one park to inside the other.
 
You should have time to do each park well if you devote one full day to each park. As above poster stated, the only ride you will not be able to do is the Hogwarts Express train which goes back and forth between the two parks. They check each persons ticket on the way in to Hogwarts Express to make sure that you have a park to park ticket. Since you are staying off site, be aware that one park opens one hour early each day only for those staying at on-site resorts so the Harry Potter area in that park will already have a crowd by the time you get there.
