We currently have a Christmas reservation for a split stay in late December 2020. We haven't cancelled yet --- we have a crazy high WJ credit for cancelling our July trip to BC --- and don't want a crazy high credit with AC for our Dec trip as well.
I know no one has a crystal ball about this but do you think that Canada/US travel will resume by December? Will the 14 day quarantine still be in effect on either side (a deal breaker for us)?
I'm tempted to re-book for summer 2021 but hate the idea of the heat/humidity of a July/August vacation in Orlando.

We don't mind too much as long as we take it slow. I have never really been for a full week at any other time of year though, we spent a few days in February once, and once in April, once in May (pre and then post cruises). I think August had more storms, but it was certainly hot in April/May already. I do think my next Disney trip will end up being two weeks, probably with a few days in the middle at Universal/SeaWorld, and most likely in August (maybe 2021 but more likely 2022). Hmm, Disney or Universal in December could be a good plan if we can't cruise... though if one isn't going to happen the other isn't likely either.
