Staying for one night at pop century; at Coronado the bus always comes 11:30-noon. Last cruise the people at all stars got picked up at 1:30. They missed lunch. Anyone have experience at pop what time the bus usually shows up?

When we stayed at Coronado, our bus was at 12:30.

The pick up times vary from cruise to cruse. It all gets figured out based on how many people need to get from the various resorts to the port and how to efficiently fill up the buses before heading there. The pick up window for the resorts is 10:45-1:30. No way of knowing for sure what yours will be until the night before, when you get a letter in your room telling you where/when to show up for the bus.
 
I don't think they have a set schedule and really depends on how many are registered at a resort. I've been on a cruise where our resort filled the entire bus and we went directly to port. Others we had an 1130 pickup but hit a bunch of the All Star resorts. I think they stagger them out so you don't get 10 buses showing up at the exact same time. Normally, we take about 15 minutes from getting off the bus to getting on the ship. That includes kids club registration. I have never missed lunch, though we have boarded just when rooms opened. I don't know when they stop serving lunch, but I think you can get food up on the pool deck. I could be wrong on that, though.
